KASHMIRI LAL PANEER MASALA
Preparation time 5-10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Cooking Paneer
2-3 ltr Water, पानी
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
800 gms fresh Paneer, पनीर
For Yakhni
1 ltr Water, पानी
⅓ cup Fried Onions, roughly chopped, तले हुए प्याज
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ cup Ghee, घी
A pinch of Asafoetida, हींग
2-3 no. Bay leaf, तेज पत्ता
1 inch Cinnamon stick, दालचीनी
2 no. Black Cardamom, बड़ी इलाइची
Fried Paneer, तला हुआ पनीर
Prepared Masala, तयार किया हुआ मसाला
2-3 tbsp Coriander leaves, finely chopped, धनिया पत्ता
For Frying
¼ cup Mustard oil, सरसों का तेल
Cooked Paneer, cut into slab, पका हुआ पनीर
For Masala
2 tbsp Remaining mustard oil, सरसों का तेल
1 ½ cups fresh Tomato puree, ताज़े टमाटर की प्यूरी
½ tbsp Kashmiri red chili powder, कश्मीरी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
½ tbsp dry Ginger powder, सौंठ का पाउडर
½ tbsp Fennel seeds powder, सौंफ का पाउडर
2-3 tbsp Fried onions paste, तले हुए प्याज का पेस्ट
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Paneer
In a handi, add water, turmeric powder, salt to taste, degi red chili powder, paneer and simmer it for 7-8 minutes on medium flames until cooked well.
Transfer it to a tray and keep it aside for further use.
For Yakhni
In a handi, add water, fried onions, degi red chili powder, ghee, a pinch of asafoetida, bay leaf, cinnamon stick, black cardamom and let it simmer for a while.
Add fried paneer and cook for 5-6 minutes.
Add prepared masala and cook it well for a while.
Finish it with some coriander leaves and mix it well.
Transfer it into the serving bowl and garnish it with coriander sprig.
Serve hot with steam rice.
For Frying
In a pan, add mustard oil, once it's hot, add paneer and fry on both sides until golden brown.
Transfer it to a tray and keep it aside for further use.
For Masala
In a pan, add remaining mustard oil, once it's hot, add fresh tomato puree, degi red chili powder, salt to taste, sugar and cook it for 4-5 minutes until cooked well.
Add dry ginger powder, fennel seeds powder, fried onions paste and cook it for 2-3 minutes on medium flames.
Keep it aside for further use.

Stunning landscapes, Amazing people and Amazing food !! Was in Kashmir in March 2024. Had the best time of my life. Got hosted by local families both in Jammu and Srinagar. Hogged away to glory. The haak, various Nadru recipes, Dum Aloo, the variety of Bakery items they have with Noon chai and Kahwa, the never ending munching on walnuts and other dry fruits, the warmth of both the people and the Kangri, The snow capped mountains of Pahalgam Gulmarg and Sonmarg, The local train journey from Anantnag to Banihal and the amazing visuals from the train window, the colorful Shikaras, The bustling floating market--- I can go on and on - Kashmir must be on everybody's bucket list atleast once in their lifetime.

Being a Kashmiri Pandit, I love the fact that you have used the words ‘my ode to’ and maintained the sanctity of the authentic recipe which does not use onions and tomatoes! This is a classic example of someone with a good heart, taking something authentic and modifying it with due respect to transform it into something possibly even better! So in authentic original recipe, what do you use instead of onion and tomato?

In all kashmiri dishes onion and tomato is not used. If we want to bring tangyness in some dish, we use sweet tamarind.

My wife is not a big fan unfortunately, wo to kitchen men ayegi hi nahin agar awaaz a gayi because she always complains ki bolte bolte Ranveer chupke se kuch daal deta hai recepie men aur wo hi nahin bolta. Is baat men dum to hai par main aksar kehta hun usse ki Ranveer ki recepie tumhari baat se zyada dum hai.

One important thing I'll like to add is that a wazwan is never a wazwan until it's made over a natural flame that's wood fire outside in the yard and that's the secret of royal taste of Kashmiri wazwan otherwise if you'll try from head to toe to get flavour of Kashmiri wazwan over artificial flame, it'll never taste like Kashmiri wazwan ever+ wazwan paneer is always spongy amd bouncy in texture💚

Just made this recipe... It was easier to follow, than I thought initially...I didn't have fresh dhaniya, so had to skip that... I also didn't have saunf powder, but I just dry roasted saunf a little and grinded it in the mixer... The recipe is very unique and so is the taste.... It's like a burst of flavours in the mouth... Also the paneer was so soft, yet didn't break at all.... My husband loved it... Will make it once more with fresh dhaniya. Thank you so much Chef... Must try recipe....🙏

First of all thank you so much chef for not quoting it as authentic one. Being kashmiri pandit i am so happy to see this. It looks yumm.. Although our process of making it is different. We don't use tomato and onion in this recipe. One more thing, yakhini means gravy made with curd . Yakhini itself is another recipe .❤
