My wife is not a big fan unfortunately, wo to kitchen men ayegi hi nahin agar awaaz a gayi because she always complains ki bolte bolte Ranveer chupke se kuch daal deta hai recepie men aur wo hi nahin bolta. Is baat men dum to hai par main aksar kehta hun usse ki Ranveer ki recepie tumhari baat se zyada dum hai. I am the only who follows your recipe at home and I can always see at the end after first bite - she looks at me embarrassed and asked - Kiski recipe hai? Last year I also visited kashmir and this was the best dish I tried…. Abb kashmir to phirse jaa nahi sakte kintu kashmiri panner zaroor bana sakte hai keval aapki meherbani se….shukriya chef ❤
One important thing I'll like to add is that a wazwan is never a wazwan until it's made over a natural flame that's wood fire outside in the yard and that's the secret of royal taste of Kashmiri wazwan otherwise if you'll try from head to toe to get flavour of Kashmiri wazwan over artificial flame, it'll never taste like Kashmiri wazwan ever+ wazwan paneer is always spongy amd bouncy in texture💚
Being a Kashmiri Pandit, I love the fact that you have used the words ‘my ode to’ and maintained the sanctity of the authentic recipe which does not use onions and tomatoes! This is a classic example of someone with a good heart, taking something authentic and modifying it with due respect to transform it into something possibly even better! @@aaa_1727 traditionally, authentic Kashmiri Pandit recipes don’t use and tomatoes, onions or garlic at all in any preparation. Ginger is used in some recipes. The red colour comes from Kashmiri laal mirch and the additional flavours form the rest of the spices such as saunf powder, etc.

First of all thank you so much chef for not quoting it as authentic one. Being kashmiri pandit i am so happy to see this. It looks yumm.. Although our process of making it is different. We don't use tomato and onion in this recipe. One more thing, yakhini means gravy made with curd . Yakhini itself is another recipe .❤
Just made this recipe... It was easier to follow, than I thought initially...I didn't have fresh dhaniya, so had to skip that... I also didn't have saunf powder, but I just dry roasted saunf a little and grinded it in the mixer... The recipe is very unique and so is the taste.... It's like a burst of flavours in the mouth... Also the paneer was so soft, yet didn't break at all.... My husband loved it... Will make it once more with fresh dhaniya. Thank you so much Chef... Must try recipe....🙏

Ranveer paji, I started watching at around 9 pm tonight and by 10:30 pm I had it for dinner. Thank you and love you bade bhai for sharing such a Wonderful Recipe... ❤ I have done a little improvised, added 2 green chili sliced and 4-5 crushed black pepper in yakhni for a bit more tikhapan. And also replaced the coriander leaf with kasoori methi. Actually I didn't have coriander leaf at home.

In all kashmiri dishes onion and tomato is not used. If we want to bring tangyness in some dish, we use sweet tamarind.
