In a small bowl, whisk together the egg and milk to make the egg wash. Set aside. Line a large baking sheet with parchment paper. Cut the two puff pastry sheets into 4 squares each so you have 8 pieces. You can also trim them to make the croissants smaller. Brush the sheets with egg wash and fold each one. Press down on the edges to ensure it doesn't rise and open too much. Brush the outside with egg wash now too. Pop in the oven to bake for 20 to 25 minutes or until golden brown all around. Take out of the oven and allow to cool to room temperature. Cut each croissant in half to open it up and fill it with the custard and sliced strawberries. Dust the tops with powdered sugar and enjoy!
I made these for my family and they tasted AMAZINGGG. Everyone loved them! The only thing I would recommend doing differently is to put the heat up to medium heat rather than medium-low when you’re making the custard a thicker consistency. Or else it’s going to take a lot longer than a few minutes to do. But in the end I’m very happy with how it came out! And it only took me about 1.5 hours which is pretty good timing for a recipe I’m trying for the first time! If I haven’t made something before it usually takes me up to 2-2.5 hours to do.
Im v happy I ran into your comment. I had run out of milk so decided to use almond milk instead and almost thought that I had ruined it but turning the heat up and whisking helped bring it all together (in case anyone else wants to make it but doesn't have whole milk on hand) it works!

These look super delicious but they are not croissants this is a strawberry puff pastry with an egg yoke custard. Puff pastry and croissant dough are not the same thing….

I made something similar to this once. Instead of custard I used double cream and I didn't have strawberries so used raspberry jam. I didn't even make triangles, just cut the puff pastry into rectangles.
This is a strawberry Mille-feuille I do believe, not a strawberry and custard croissant, especially as you substituted yeasted laminated dough for puff pastry, although it’s made with a similar process and ingredient’s it’s missing some vital steps and materials which would enable it to become said dough, which could then be transformed into French breakfast pastries like croissant’s and pain au chocolat. The “custard” you made is also not “custard”, it’s called crème pâtissèrie, a pastry cream made utilising the same ingredients that you used for your “custard” and is one of the main components of the dish. Custard (crème anglaise) does not and should not contain any cornflour, this is really the only difference between the two. If anyone was wondering Mille-feuille are absolutely divine! they are light, fluffy, sweet, fruity (if using) and so refreshing… a delectable treat particularly in the summer time! You can easily find a recipe for a Mille-feuille online too, with several flavour variations from strawberry to chocolate etc. The spoken information is confusing, it doesn’t seem to be a recipe for strawberry croissants.
