Yo bruddah I had to pause video to give you this one tip cause it took me till older than you to figure it out. Try cutting the the ginger the opposite direction or lengthwise, it's the same concept as cutting certain beef cuts either with or against the grain based on the cuts and results desired. You'll find the ginger will cut into slices a lot easier when your blade isn't fighting each individual fiber of the root.

speaking of the Ginger, I grate mine on the medium grate as I use less Ginger yet still get plenty flavor. Grate the ginger of Fine for Cold Ginger Chicken !!
