Great video! I had truly never really had pasta until I had it in Italy, that's for sure. Next time make sure to try out Amor Di Pasta in Garbatella. It's a very small location that only serve during lunch hours, but it's always fresh pasta made the same morning! They have a wide variety of different pasta but every day they have a traditional specialty of the day. It's €5 for a to-go box (there are small tables to stand and eat inside but like I said it's a very small place) and that's a great bargain considering how amazing it is. Far from the tourist areas in Rome, truly a hidden gem! I can never thank my friend enough who somehow managed to spot their small sign from a distance when we were walking back to our hostel for some lunch. If you look up Google reviews you'll also notice it's 99% 5 stars and they're all from Italians, so the locals definitely agree on the quality! ;)
So nice to see you go off the beaten track and show some authentic spots. A lot of those dime a dozen youtubers going to all the tourist traps is so annoying. They don't get the real experience, or even seem to want the real experience.
We ate at "Mama Ristobistrot" twice. Looks like a library, small, friendly, daily menu is "on the board'. We had appetizer (jumbo shrimp marinated in "fruity" ? sauce, wrapped with Parmesan like cotton candy and deep-fried - without a doubt the best thing I ever ate), and two pastas (mine something with olives and artichokes, hers was so good I tried to reproduce it) and split dessert + 1 glass wine. Bill - $77 Euros. I didn't know and tipped so when we returned they gave us dessert on the house! . I told the waiter hostess that many in the US no longer ate pasta. "What you mean - not eat pasta?" She was truly dumbfounded, unwilling to believe anyone could be so dumb. All Roman food was similar- fresh ingredients, simple preparation, cooked perfectly, less rather than more (pasta sauces and pizza toppings).

Hi, Brooke and Cody, I am enjoying your videos as "research" (that is what I tell my wife) for our upcoming return to Italy. Seems like in most of you Italy videos I hear loudish US voices in the background, whilst you guys speak more sotto voce. Also, your website seems to be down.

Roscioli (pronounced Row-shol-ee) is still considered to be good, but the other places are for tourists.
Do Italians really eat pasta daily? Also do they make pasta salads or is that an American thing?
I think quality of the ingredients is very important.
Amatriciana, gricia, carbonara, cacio e pepe, arrabbiata, Pajata, Trippa and Suplì. Roman Kitchen is the best.
