Cauliflower Tortilla Wraps | HomeStyle Gluten Free

- These wraps are something we make frequently. They hold up to rolling so well, often times better than commercially available GF wraps... and they taste great! ** See description for recipe **
INGREDIENTS
2lbs cauliflower, riced (approximately 1 large, or 1.5 small/medium)
2 whole eggs
2 egg whites
1 tsp salt
2 tsp GF taco seasoning (optional)
2 tsp dried cilantro (optional)
1 cup grated cheese (optional)
DIRECTIONS
Rice and steam cauliflower
- pulse in food processor, or grate on a box grater
- steam in a steamer basket, in a microwave, or boil in 1" of water for ~5-7min
Strain cauliflower in a sieve, transfer to a clean dishtowel, and squeeze all the water from the steamed cauliflower. It should be dry once you're done.
Mix in eggs, seasoning of your choice, and cheese thoroughly. Remove or break down any large chunks.
Portion onto parchment lined baking sheets. Flatten to 1/8" thick using another sheet of parchment paper.
Bake for 25-35min @ 375f. Remove to cooling racks and allow to cool for 5min before using. If storing in the fridge or freezer, separate with wax or parchment paper in ziplock bags or airtight containers.

I made this with 1/2 cauliflower head and it was frozen. I put it in the food processor while frozen then steamed. I used 1 egg and 1 egg white. 1 tsp of seasoning and 1 tbsp of almond flour(added A. flour bc it looked watery and I couldn't figure out why...I FORGOT THE CHEESE)..they came out very nice even without the cheese. excellent flavor! Thanks for this process!
Hey Sweetie! I made these wraps/tortillas and they came out fabulous!!! I didn't have a big head of cauliflower, so I adjusted the recipe to one egg and one egg white. I didn't add quite a cup of mozzarella cheese. I did exactly as you said and it came out just like yours. Mine made 5 wraps/tortillas. I took two of them and one Morning Star Spicy bean veggie burger that I divided among the two by breaking it up evenly. I chopped up some avocado, cherry tomatoes, cilantro, green onions and plopped some low-cal sour cream and a big splash of Tabasco sauce. Yummers!! Thank you! This is a keeper!

Oh this is a life saver. I'm so 'allergic' to bread carbs. I gain weight just looking at baked goods. seriously. Ever since I found the cali 'pizza' dough I've perfected it. Now it's time for tacos and burritos! This is fabulous. I've never been so giddy about cauliflower.

I just made these and they are SO good ! I simply stuffed mine with a salad blend, onion & a avocado dressing that I make and it was delicious.. This will be a 'regular' for us. Thanks for sharing ! (PS.. Adding minced onion in with the mix would be great.. I'll try that next time... and for the person that was worried about the taco mix not being gluten free, just add 'cumin' for the similar flavor) :)

This is a great recipe. I can't have wheat (Asthma trigger), and I'm missing bread and wraps like crazy, so I'm looking forward to trying this and other cauliflower alternatives to wraps and bread.

Enjoyed your video! I just learned that you can do the cauliflower the lazy way and it works. Process cauliflower then cook on medium heat for 10 minutes, stirring here and there. It is ready to go into your recipe. The cooking gets rid of the moisture.

AWESOME! Thanks for sharing this COOL video, but instead of baking them in the oven, would it be possible to cook them on a griddle, what we call here in Mexico a Comal? This is the original way our grandmothers and mothers made corn tortillas and something similar to the way pita bread is made in the Middle East and adjoining areas.👍 and greetings👋from central Mexico! 🤠

+Alicia Maria being that they have egg in them, I wouldn't go past 4 days in the fridge. You should be fine for a month or two in the freezer with most of the air removed from the bag.

+shay 31095 being that you're working with eggs, the general consensus is usual 4 days in the fridge or a few months in the freezer, assuming you've removed as much air as possible when bagging them up.

+Maimoona Nadeem you can absolutely freeze them, separating with parchment paper works really well so they don't stick. I wouldn't keep them at room temp any longer than necessary though, since you're dealing with egg in them.

Loved the recipe until the tortillas wouldn't come off of the paper. Any suggestions? they smell great but I cant use them with paper on them.
You didn't mention oil or flower on the paper before the oven, is this necessary?
No, I use inexpensive pre-cut parchment paper. If they stick, I find it's best to let them cool a bit, flip them over, and peal the paper off. I've only had this happen twice though, they usually come off the paper very well.

+Mrs Blast I like to separate with parchment and store in ziplock bags. Thaw in the fridge or on the counter. You can heat in the microwave, toaster oven, or a frying pan. Being thin, they don't take much to warm up.

+915MONI no more than 4 days in the fridge. You can store longer in the freezer. Just separate them with the parchment paper in a zip lock bag.

Just don't get the pan too hot, and make sure it's a good non-stick pan. Let us know how it turns out!

+thegoinggreenmama The cheese helps keep them flexible after they've cooled down, or been in the fridge/freezer. With just the egg/cauliflower, they turn quite brittle once cool, but if they're warm, they'll work quite well still.
This recipe was spot on. Made my own spice mix. Perfect for taco, burrito or wrap. Love it

I did this and the bread was stuck on the baking sheets. Any idea why?
If it sticks to the parchment paper, just let them cool a bit and it should be a little easier to remove.

+masonryjoe it depends entirely on how large you make them, but my recipe usually makes between 6 and 8 medium sized wraps

I just made these just like you did and at the end I couldn't seperate the parchment paper from the tortillas!! it ruined the whole batch :(
+matt p it could be something about the particular parchment you're using? If you try again, place the parchment and wraps onto the cooling racks and wait for them to cool before trying to separate. Sorry to hear. Good luck!

+Kenzieabrom Gelbart I actually make my own using Alton Brown's recipie, but still use my old bottle. A lot of McCormick's new seasonings are gluten free though, but it's absolutely something you have to look out for.

+MC MC yes, they just tend to be a bit more brittle. I think my original recipe on my wife's channel didn't use cheese, but was otherwise exactly the same.

+Asian Goddess I've gotten in the habit of washing my hands every time I pass the kitchen sink. With 3 young kids, my hands (and food) are likely the cleanest most sanitary things in my house, with or without rings. Glad you liked the video!
