Have you ever come across a w123 with the Skid Plate for the undercarriage? Seem like majority of them don't have them from I heard it was a optional piece. I guess people back then was not to worried about protecting the undercarriage like all modern Mercedes cars (especially the high end Mercedes) come with that undercarriage protector even if its hard rubber now days. I thought they were always good protection.
Skid plates are for off-road vehicles there's no reason to have a skid plate on a on-road vehicle. I have never seen one a w123. The plastic covers that you see on modern Mercedes are not skid plates, they are for airflow and aerodynamic drag reduction.

What transmission and differential fluid are you using?
Use Valvoline dex/merc 3 for the transmission. Use Valvoline 80w90 gear oil for the diff.
