Cook Time: Approx. 45 minutes
Prep Time:
Seasoning of Shrimp - 30 minutes
Marinating Time - 1 hour
Ingredients:
Shrimp (shelled and deveined) - 3 lbs
Washing of Shrimp:
Lime Juice - 4 tbsp
Water - 6 cups
Seasoning Mix:
Pimento Peppers - 3 tbsp (finely chopped)
Garlic - 3 tbsp (finely chopped)
Chadon Beni - 3 tbsp (finely chopped)
Onion - 3 tbsp (finely chopped)
Whole Hot Pepper - 1
Mustard Oil - 2 tbsp (substitute - Vegetable Oil)
Fine Thyme - 2 tbsp (finely chopped)
Curry Powder - 3 tbsp
Ground Geera (Cumin) - 2 tbsp
Chive - 3 tbsp
Black pepper - 1 tbsp
Salt - to taste
Tomato - 4oz (small diced)
Bay leaf - 1
Ingredients to Chunkay (Sauté):
Mustard oil - 3 tbsp (substitute - Vegetable Oil)
Garlic - 4 whole cloves
Onion - 3 tbsp (finely chopped)
Pimento peppers -3 tbsp (finely chopped)
Curry Powder - 4 tbsp
Water- 3 tbsp + 1 cup
Whole Geera (Cumin) Seeds - 1 tbsp
Method:
Washing of Shrimp:
Using a large bowl, add shrimp, lime juice and water.
Let soak for 15mins then rinse thoroughly in bowl under running water.
Strain out excess water.
Seasoning of Shrimp:
Add all ingredients listed in the seasoning mix to washed shrimp and massage into shrimp for 5 mins.
Cover and allow shrimp to marinate for at least 1 hour.
Chunkay (Sauté):
Using a medium sized bowl, add all ingredients for Chunkay, except oil, and mix.
Place heavy metal pot or skillet on stove over medium to high heat.
Add oil and allow to heat up.
When pot and oil is very hot, add Chunkay ingredients and stir, allowing to cook for 5mins.
Cooking of Shrimp:
Add seasoned shrimp to chunkayed ingredients, stir thoroughly and cover.
Let shrimp cook for 5 minutes
Allow shrimp to spring its own liquid before adding water.
If water is needed, add 1 to 1 ½ cups or as much as is desired.
Cook for a further 15 minutes then check for doneness of shrimp.
Chunkay meaning:
The process of sautéing by adding ingredients such as garlic, onions, pimento and other spices to very hot oil to enhance their flavors.

Nobody, especially from the Caribbean should need this recipe because it's super easy to make. I could make just about anything curry and it would taste good. My food don't be normal atall. Lol. 👌

Just think amt of seasoning is a little bit 2 much..my thing is depends on d amt of meat is how u add d green seasoning..but otherwise am learning differences of cooking from u chefs..l love cooking

Maybe I missed it but what was the temperature used?
I follow no recipies I take hints and ideas techniques from here and there and make my own creation.i use this as a reference and add other stuff or omit as to my preference...I now also drown my curry in coconut milk...it's works for me
