Looks good! There's so many different ways to make curry all over the world. I watch Food Network a lot and they make so many different curry bases and to them it's like a mixture of all kinda ingredients and spices etc. But of course I'm biased and feel Trini curry is the best 😂
Not Cumin! It's my kryptonite, but I might put the tiniest pinch in for authenticity 😢 Didn't know that green Scotch Bonnets are a bit milder. That's invaluable information ( for the few flammable diners at home 🥵). This is next Fridays menu 🎉Ever so grateful 😊

makes an excellent gravy base, plus the acidity of the tomato brings balance

Looks great - any tips for if I was using frozen and/or precooked prawns or shrimp?
I've never used pre-cooked shrimp so I really cannot comment with certainty.. these shrimp where previously frozen. thaw, clean and wash..drain
