One thing I never expected to hear ANYONE say is that -14? -anything was perfect weather. Even if that is Celcius, it would be 6.8 degrees Farenheit. That is crazy cold for me. Weather in the teens (F) causes us issues down in the southern U.S. as nothing is built to handle temps that low. And there are no snow plows that I know about. We just stay home until it melts. I did buy snow boots because it snowed a foot here last year. It may hit -1 here Wednesday night and that will be the coldest anywhere I've lived in 65 years! Usually, I can keep the garden going through December and sometimes through spring (by using heavy frost covers). But I'm planning to harvest almost everything tomorrow and start canning it.
A quick tip for freezing tomato paste. Grab a cookie sheet and line it with parchment paper. Use a tablespoon cookie scoop and scoop dollops of tomato past until you have a full cookie sheet full then pop the sheet into the freezer until frozen then transfer into a freezer bag. Most recipes call for a couple tablespoons so it makes it easy to grab out two frozen scoops of past.
I have a tip about parchment paper from the roll : Instead of struggling to get it to lay flat, crumple it up first and then spread it out. It really works !! Even works on waxed paper too. ❤

I grew up in Wisconsin and my Mom would bring in a bucket of clean snow and put vanilla and syrup in it (not hot) to make iced snow cream. You brought back some fun memories of special snow filled days. I loved today's video as it was filled with different things. The sauce looks great and I will make that asap. Thanks!
The snow Ice is a nice idea....but have you ever wondered why your car is dirty after a rainfall, even so you just washed the car an hour earlier and it's not been driven anywhere inbetween? There is lots of dust from windy prairies, and compounds, like emission effluents from smoke stacks, wildfire debries, being kicked around in the atmosphere coming from Alberta, Saskatchewan, Montana, North Dakota blown over to Minnesota and Wisconsin. I travelled those areas quite a bit for my job (now retired), and sometimes the sky would literally turn into dusk-like gray and it would make me weeze while driving in my car. Recommend ya'll think about whether to consume it, those particles are also enveloped in the snow.

That stove tho 💥 I love how your cast iron pans are hanging to.Squash are so underrated in my opinion, they can be added to so many recipes, cooking and baking, if you haven’t grown Red Kuri, you really should, They cook so fast, they’re super nutty and the skin is soft and edible. West Coast Seeds sells them, they also store really well. Tin foil over the sauce pot, absolutely brilliant 🤣 Another awesome video 🌿
Red Kuri is my favorite and go to for creamy squash soup. I grew up on wood stove cooking/baking in Germany. It's nice and efficient if you have wood/coal, but its temperamental, you really need to understand how much wood/coal to control heat, and if you're baking a cake, how to combine heat and time, and be ok that it might not turn out perfect. It's also messy...woodsy residue, dust, dirt from stacking outdoors, ash, and of course scrubbing and treating the oven plate itself at the end of the day or once it's cooled sufficiently. We always kept a big pot of water on top, to keep humidity up in the kitchen and adjoining rooms. And of course, you either have to buy the wood, or cut and chop it from your property, stack it, and dry it for at least year to reduce moisture in the wood itself. No doubt, it's a novelty, but it can be cheap energy if you have the wood, and don't mind the effort. Personally, I have fond memories of that period and that type of cooking, I can imagine myself having one for maybe my outdoor kitchen...something to think about. There are splashguards you can purchase cheaply....Aluminum foil if used with acidic foods like tomato sauce, will oxidize the alu-foil, even the steam will oxidize it and the drippings will end up in your meal...don't really recommend using foil for any cooking, except when wrapping it with Parchment Paper first and then covering it with alu-foil to contain what it is your baking. Hope this helps.
Love me some Buttercup squash❣️ I take off the cap, scrape the seeds out, add some bacon grease and a bit of brown sugar….then roast until tender. Yum! Add a little butter to it on your plate. Omgoodness, so good 😊

We have had our Heartland Oval for over 15 years now !!! It is the heart of our home in the colder months !!! Only difference is ours has the water tank .
Who doesn’t love spaghetti? One of my families favorite meals. I put pumpkin in my lasagne sauce. My husband said it was the best I ever made. If he had known in advance he would of turned his nose up at it. Wow. I haven’t made snow ice cream in years.
A few months ago I made carmelized onions to can. When my eyes started burning, I got the idea that maybe onion juice was absorbing into my skin and causing the burning. I washed my hands and put on disposable gloves. I had no further problems. 😊
I'm in Central Alberta, it's probably an 8 to 10 hour drive away, and we're covered in snow too. Winds have been blowing from the south as well, but I'm at -20 Celsius/-4 Fahrenheit and sunny. I had a wood stove when I was a teen, and it was also the heat source. My parents were completely off grid, no power or plumbing but they called it "Roughing it" back then. I called it camping year round. Our wood stove was all white with the warming space above like yours, my step mom would use it for rising bread the same way, and we had the old cast irons to heat on the stove and actually used them to iron clothing. We also had a water tank on the right side, for our hot water. Now I'm missing it.

When I have to chop a lot of onions I place a small fan on the counter blowing the onion smell away from the cutting board. I can chop onions all day and not shed a tear!
Love the idea of putting squash in my spaghetti sauce. Busy day for me today making cabbage rolls to be baked then frozen for winter quick meals. My husband works out of town on occasion and takes frozen and canned meals for quick nutrious meals after a long cold day on the job. Keep warm stay safe.

After I use the amount of tomato paste I need from a number 10 can I use a cookie scoop to scoop out the remainder onto a cookie sheet and then freeze the tomato paste balls. When frozen I remove them from the cookie sheet into a ziplock bag. This makes the paste super convenient to use and saves on ziplock bags🙂
Chelsea, I grew up with a cook stove/wood stove, and there's nothing better than homemade biscuits right from the stove plastered with butter and honey 😋

I have a small table top "kitchen" fan that I use close to my onions when I'm chopping, it really helps with no tears, just make sure to keep it clean and dust free.
Totally reusable Silicone bags come in different sizes- bought a bunch on Amazon plus silicone containers which you can pop into the oven from the freezer🥰❣️Love your channel- just found it today! Used to live in Wash. State as a child. My Great Grandma cooked solely on wood- burning stove- even ironed her clothes with the heavy irons you set on the stove to heat up. She was a great cook🥰❣️

Memories of going across the river to my aunts farm in Vermont during sugaring season. We'd have sugar on snow with homemade warm raised donuts my aunt would bring down to the sugar shack with dill pickles on the side to cut the sweetness. Childhood like your children have is priceless ❤
Hello from New Hampshire. Wonderful to see you using an Elmira Oval. I bought a new one in 1980! It was an amazing stove. Now we have " Matilda ". She is 1930 Home Comfort kitchen wood stove. Made in St. Louis. Our Great Uncle Robert purchased her new. You are correct, we designed our new house to have loads of clearance around this non airtight stove, but she heats the house, cooks & bakes perfectly. I have also owned the Heartland Sweetheart kitchen wood stove. I recommend these Canadian stoves from Elmira Stove Works for people to try. Very user friendly. They do all have their personalities. Like having another person in the kitchen :-) You have put me in the mood for the first snowfall and winter cooking. Thanks for taking us along! ~ Diane
Oh yes! Buttercup is my favorite too. SO sweet and good. I would love some in my spaghetti sauce! Never thought of that, although I have had green zucchini in my spaghetti sauce. YUM. I am a BIG squash lover.

I was going to suggest this too. I use silicone muffin liners for larger quantities and then pop them out into a bag or container. Then you don't have to use the plastic baggies, but also don't have a ton of freezer space taken up by all of the little containers.
When I can chicken thighs and legs, I cut the meat into chunks before canning which eliminates the stringiness. Perfect for casseroles or soups. My late dh would not eat dark meat, but never realized the canned legs and thighs were not white meat when mixed into casseroles or soups.
I so love snow! I lived in Alaska for 5 years back in the 1970’s when my kids were small! Living in Tucson, Arizona we get snow very seldom! Love that wood stove!
If you have a Dollar Tree store accessible to you, they have quality plastic food storage containers that are suitable for freezing. The packages are usually 2 or 4 each for $1.25 US. Just make sure you don't mix brands or you will have lids that don't fit all of the same sized containers.
Isn't it fun to see how differently do many people traditionally make staple foods!? I've heard of squash in spaghetti sauce but never ever celery... interesting. We use spaghetti squash as noodles with our spaghetti sauce. Loaded with garlic, basil!! The bread looked delicious!! Miss snow so much I could cry and wood stoves!! Maple candy looked interesting... but not enough snow here to do that...I think it needs snow to really make it special! Thanks so much Chelsea for all you share! Such a delight!! I put all sorts of veges, grated zucchini and carrot, riced cauliflower and broccoli, baby spinach pumpkin and squash, etc etc. it makes it into a whole meal and sneaks a bunch of veges into my picky kids.

Beautiful stove. My mom had one in her house and always cooked on it in winter to help heat the house. They didn't like the baseboard heaters as the electricity to run is expensive. It is an antique and probably go with the house when we get it sold. It is that light green.
Thanks for answering how you handle the extra food once you open the No. 10 cans. My family isn't as large as yours, so I never thought about how quickly you would go through things like simple condiments. Totally makes sense. Great idea on refilling the squeeze bottles.
If you think about it in enough time before you are ready to chop up your onion, try freezing your whole onion, paper still on, for about 2 hrs… youll be amazed at how it doesnt affect your eyes!

My mother used to tell me about how her mother made her maple snow candy. I tried to do what she told me to do-but didn't realize I had to cook it first! I can't wait to try it this winter! Nobody around me had ever heard of it before, and a small part of me wondered if I'd misunderstood my mother's stories.
Great video! I, too, love spaghetti! I used to cry all the time with onions and resorted to going outside where there's more ventilation (not the best during winter). However, I found that if I cut off the top (not bottom), peel off the top layer and slice them in sections from near the top to bottom and then turn it on its side to dice them, the juices can't escape and I no longer cry. Also, I get to stay inside. 😀

Making sure that your knife is very, very sharp when chopping/slicing onions helps with eye irritation! Works great for me and I used to cry a river cutting them up‼😂

I bought a small soft/medium hammer for my kitchen. It’s all rubber/plastic, so washable! I gently tap the back of the knife when cutting harder veggies such as spaghetti squash. Great if arthritis is bothering your hands.

With the onions being so hot, you might make some fire cider with them. I just started mine on Sunday. Good way to combat the colds and flu that are bound to pop up.

I need to learn how to make sweetened condensed milk from scratch but what you do is fill a big bowl with clean snow & then add in your sweetened condensed milk & viola, instant ice cream 🥰 I have been watching quite a few videos on making rustic french baguettes. There are splashguards you can purchase cheaply....Aluminum foil if used with acidic foods like tomato sauce, will oxidize the alu-foil, even the steam will oxidize it and the drippings will end up in your meal...don't really recommend using foil for any cooking, except when wrapping it with Parchment Paper first and then covering it with alu-foil to contain what it is your baking. Hope this helps.
Love me some Buttercup squash❣️ I take off the cap, scrape the seeds out, add some bacon grease and a bit of brown sugar….then roast until tender. Yum! Add a little butter to it on your plate. Omgoodness, so good 😊
My chickens love the snow! I leave logs out for them to give their feet a break from the cold. We also provide straw paths.

Who doesn’t love spaghetti? One of my families favorite meals. I put pumpkin in my lasagne sauce. My husband said it was the best I ever made. If he had known in advance he would of turned his nose up at it. Wow. I haven’t made snow ice cream in years.
A few months ago I made carmelized onions to can. When my eyes started burning, I got the idea that maybe onion juice was absorbing into my skin and causing the burning. I washed my hands and put on disposable gloves. I had no further problems. 😊

I'm in Central Alberta, it's probably an 8 to 10 hour drive away, and we're covered in snow too. Winds have been blowing from the south as well, but I'm at -20 Celsius/-4 Fahrenheit and sunny. I had a wood stove when I was a teen, and it was also the heat source. My parents were completely off grid, no power or plumbing but they called it "Roughing it" back then. I called it camping year round. Our wood stove was all white with the warming space above like yours, my step mom would use it for rising bread the same way, and we had the old cast irons to heat on the stove and actually used them to iron clothing. We also had a water tank on the right side, for our hot water. Now I'm missing it.

It is generous of you to give your squash seeds to your chickens! I love roasting all squash seeds so much that I don't think I could give them up.
When I have to chop a lot of onions I place a small fan on the counter blowing the onion smell away from the cutting board. I can chop onions all day and not shed a tear!
Love the idea of putting squash in my spaghetti sauce. Busy day for me today making cabbage rolls to be baked then frozen for winter quick meals. My husband works out of town on occasion and takes frozen and canned meals for quick nutrious meals after a long cold day on the job. Keep warm stay safe.

After I use the amount of tomato paste I need from a number 10 can I use a cookie scoop to scoop out the remainder onto a cookie sheet and then freeze the tomato paste balls. When frozen I remove them from the cookie sheet into a ziplock bag. This makes the paste super convenient to use and saves on ziplock bags🙂

my mom made snow candy many times its a French Canadian thing to do in winter. food looks yummy! man looks cold there! It is -6C in Errington yesterday.
With the squash, my mom always added a few drops of walnut extract oil. It was her secret for buttercup squash.
When we lived in Canada (Quebec), we poured ours onto the snow on the deck as well in dollops and added lollipop sticks! Gorgeous xoxoxo

I have a small table top "kitchen" fan that I use close to my onions when I'm chopping, it really helps with no tears, just make sure to keep it clean and dust free.
Totally reusable Silicone bags come in different sizes- bought a bunch on Amazon plus silicone containers which you can pop into the oven from the freezer🥰❣️Love your channel- just found it today! Used to live in Wash. State as a child. My Great Grandma cooked solely on wood- burning stove- even ironed her clothes with the heavy irons you set on the stove to heat up. She was a great cook🥰❣️

Memories of going across the river to my aunts farm in Vermont during sugaring season. We'd have sugar on snow with homemade warm raised donuts my aunt would bring down to the sugar shack with dill pickles on the side to cut the sweetness. Childhood like your children have is priceless ❤
Hello from New Hampshire. Wonderful to see you using an Elmira Oval. I bought a new one in 1980! It was an amazing stove. Now we have " Matilda ". She is 1930 Home Comfort kitchen wood stove. Made in St. Louis. Our Great Uncle Robert purchased her new. You are correct, we designed our new house to have loads of clearance around this non airtight stove, but she heats the house, cooks & bakes perfectly. I have also owned the Heartland Sweetheart kitchen wood stove. I recommend these Canadian stoves from Elmira Stove Works for people to try. Very user friendly. They do all have their personalities. Like having another person in the kitchen :-) You have put me in the mood for the first snowfall and winter cooking. Thanks for taking us along! ~ Diane
Oh yes! Buttercup is my favorite too. SO sweet and good. I would love some in my spaghetti sauce! Never thought of that, although I have had green zucchini in my spaghetti sauce. YUM. I am a BIG squash lover.

I freeze our tomato paste in tablespoon scoops on wax paper. Once frozen, I put the balls in to a bag/container.
I was going to suggest this too. I use silicone muffin liners for larger quantities and then pop them out into a bag or container. Then you don't have to use the plastic baggies, but also don't have a ton of freezer space taken up by all of the little containers.
When I can chicken thighs and legs, I cut the meat into chunks before canning which eliminates the stringiness. Perfect for casseroles or soups. My late dh would not eat dark meat, but never realized the canned legs and thighs were not white meat when mixed into casseroles or soups.
I so love snow! I lived in Alaska for 5 years back in the 1970’s when my kids were small! Living in Tucson, Arizona we get snow very seldom! Love that wood stove!
If you have a Dollar Tree store accessible to you, they have quality plastic food storage containers that are suitable for freezing. The packages are usually 2 or 4 each for $1.25 US. Just make sure you don't mix brands or you will have lids that don't fit all of the same sized containers.
Makes me think of the movie Julie & Julia where Julia is chopping an entire table of onions for cooking school. 😂 the googles are awesome.

If you added dried pasta or macaroni to that pot of sauce you'd have goulash as well. So versatile!
Isn't it fun to see how differently do many people traditionally make staple foods!? I've heard of squash in spaghetti sauce but never ever celery... interesting. We use spaghetti squash as noodles with our spaghetti sauce. Loaded with garlic, basil!! The bread looked delicious!! Miss snow so much I could cry and wood stoves!! Maple candy looked interesting... but not enough snow here to do that...I think it needs snow to really make it special! Thanks so much Chelsea for all you share! Such a delight!! I put all sorts of veges, grated zucchini and carrot, riced cauliflower and broccoli, baby spinach pumpkin and squash, etc etc. it makes it into a whole meal and sneaks a bunch of veges into my picky kids.

Beautiful stove. My mom had one in her house and always cooked on it in winter to help heat the house. They didn't like the baseboard heaters as the electricity to run is expensive. It is an antique and probably go with the house when we get it sold. It is that light green.

Thanks for answering how you handle the extra food once you open the No. 10 cans. My family isn't as large as yours, so I never thought about how quickly you would go through things like simple condiments. Totally makes sense. Great idea on refilling the squeeze bottles.

If you think about it in enough time before you are ready to chop up your onion, try freezing your whole onion, paper still on, for about 2 hrs… youll be amazed at how it doesnt affect your eyes!

My mother used to tell me about how her mother made her maple snow candy. I tried to do what she told me to do-but didn't realize I had to cook it first! I can't wait to try it this winter! Nobody around me had ever heard of it before, and a small part of me wondered if I'd misunderstood my mother's stories.

I used to cry all the time with onions and resorted to going outside where there's more ventilation (not the best during winter). However, I found that if I cut off the top (not bottom), peel off the top layer and slice them in sections from near the top to bottom and then turn it on its side to dice them, the juices can't escape and I no longer cry. Also, I get to stay inside. 😀

We put a bowl of cool water next to the chopping board when cutting onions, I don't know if it actually works but it could be worth a try, great goggles none the less.
I use a bowl of water and wear gloves, works for me.

She is beautiful. ;) also a hint for your smaller quantities of tomato paste is to spoon it into ice cube trays before freezing, then once frozen you can transfer them to a not snap log bag, jar or container of your choice & keep in freezer until needed. :)

For the tins or any container u can use those silicone or rubber stretchable caps. They are airtight too.

I bought a small soft/medium hammer for my kitchen. It’s all rubber/plastic, so washable! I gently tap the back of the knife when cutting harder veggies such as spaghetti squash. Great if arthritis is bothering your hands.

With the onions being so hot, you might make some fire cider with them. I just started mine on Sunday. Good way to combat the colds and flu that are bound to pop up.

Something I've done over the years is snow ice cream. I need to learn how to make sweetened condensed milk from scratch but what you do is fill a big bowl with clean snow & then add in your sweetened condensed milk & viola, instant ice cream 🥰
