DELICIOUS !!! The socarrot (?) is called "raspa" in Cuban . It looked really yummy in the paella. Love the way the rice is left juicy and sticky, not drying all the way. What a pleasure to make and eat such a dish .
In Karnataka India we cook a similar dish called "Beeranjee" we use mutton or chicken or beef meat , coconut oil and small grain rice and lot of herbs and spices and at last Indian lime. I hope it tastes similar.

Paella is not only delicious dish but also have nice story behind it, Paella comes from the Arabic word بَقَايَا, pronounced baqaayya, meaning "leftovers". This is based on the 8th-century custom in which Moorish kings' servants would take home the rice, chicken, and vegetables their employers left at the end of the meal😄😋
@@Goldbelly Vamos a ver, soy nacido y criado en Valencia, puedes creerme o no pero te garantizo que he comido (y preparado) muchas paellas a lo largo de mi vida, e insisto en que estoy total y absolutamente convencido de que ese plato está riquísimo de sabor y con el arroz y todo lo demás en su punto justo, pero la paella lleva unos determinados ingredientes y no son esos. Sin acritud ninguna colega. ;)

Who on earth would eat aioli with paella? Never heard of anyone pairing it with paella. Most people would just eat it as it is, or squeeze a bit of lemon over it.

SAFFRON needs to be steeped like a tea prior to adding- otherwise your destroying the flavor / savor of saffron

Paella is the valencian word for pan, so I'm not entirely sure that you're correct.
