One-Pan Chicken Scarpariello: The Easy and Delicious Italian Chicken Dinner

- Chicken Scarpariello is a classic Italian-American dish made with juicy chicken thighs, sweet Italian sausage, bell peppers and onions. It is often served with potatoes or pasta.
There are many versions of this chicken recipe, but this is the one we have grown to love. This chicken recipe originated in southern Italy back in the 18th century, which included leftover Sunday tomato sauce, but the Italian American version does not. We are making the Italian American version today. You and your family will absolutely enjoy this mouthwatering Italian chicken recipe.

Ingredients: 6 to 8 Servings
• 5 - 6 lbs. of chicken thighs with skin
• 6 TBSP of olive oil
• 2 lbs. of Italian sausage
• Salt & Pepper to taste
• 3 bell peppers (red, orange & yellow)
• 1 large yellow onion
• 4 cloves of garlic
• ½ cup of white wine
• 2 TBSP of Balsamic vinegar
• 1 & ½ cups of chicken broth
• 2 sprigs of Rosemary
Directions:
1. Salt & pepper each side of thighs
2. Heat 3 TBSP of olive oil in each pan on medium-high heat
3. Cook both sides of thighs for 4 -5 minutes (skin side first)
4. Remove thighs and add the sausage (cook until lightly brown on all sides)
5. Remove sausage and then drain some of the oil from each pan
6. Add sliced bell peppers, onions and chopped garlic to each pan and cook for 4-5 minutes
7. Add ¼ cup of white wine to each pan for deglazing
8. Add 1 TBSP of Balsamic to each pan
9. Place chicken and sausage back in pans
10. Add ¾ cups of chicken stock to each pan
11. Top with a sprig of Rosemary in each pan
12. Preheat oven to 375 F and bake for 45 - 60 Minutes

I like the outdoor "camp" style ovens on legs, but I also LOOOVE my Tramontina brand enameled cast irom I got at Costco....made in China.

I love all of your recipes! I was born and raised in Hoboken NJ back in the day when it was an Italian neighborhood. I was also stationed in Texas for a few years when I was in the Air Force at 4 different bases so I know Texas well and loved living there; absolutely love your videos and RIP mom, I lost my mom in December; Italian mother's are the best!

Amazing recipe!!! I have never seen you guys before but you make me feel like I am at home. I am also Italian/American (though living in London) and it is very nice to meet you. Excellent recipe. I learned by watching my Dad and Mom cook( Dad and Grandpa taught Mom how to cook) . I got the amounts by guessing, cook books and You Tube now. I like to add pickled peppers instead or in addition( cherry peppers, pepper dew , pepperoncini( spelling?). Thighs are juicier than chicken breasts.

Lucky Dawgs it seems like you have places there in Texas for Italian favorites. Since moving from NY down to St Mary's Georgia i haven't found any Italian specialty markets. Even in Jacksonville Florida which is a skip away there aren't any. I miss uncle Giuseppe's in Long Island. 😢

I'd like to have a Lodge "spider" style large frying pan........it has legs on it so you can put hot charcoals underneath....that's why they call it a spider. They don't manufacture them anymore so I would have to get a "retro" at a flea market.

you can get both silicone and cloth handles for those frying pans.....also large "ears"...handles for both sides of a cooking sauce pan handles....they make a small one shaped more triangular for the off--side "ear" on the frying pans and a large rounder one for both sides of a large cooking pan...NOTE: DO NOT cook in the oven or range top with the silicone heat handles attached.

Here's my theory. I don't measure either, like you guys, I learned by watching. My friends mother was just an amazing cook, my mother, my aunts, they all used the same amounts when making meatballs and mixing. I think it has something to do with your hands. Skin. What ever your natural taste is, like a cannibal. lol It goes into what you are making. Just a theory. Also your timing. How long you shake a salt shaker in your head. I can smell the vinegar from here. I prefer reg white wine or red wine vinegar. You don't put hot Peppers?

You Guys prove the fact we don't need Gas Stoves. You do all these great dishes on an Electric Stove. President Biden is right when he says to Ban Gas Stoves, let's look out for our environment. Our children and Grand children depend upon it. Let's work on that and getting rid of air conditioning for the Planets sake!!!
What does that have to do with delicious Italian food? No I guess we don't NEED gas stoves to cook but we do NEED the freedom to make the choice ourselves if we are to be free people. TBH the stove itself has little impact on the quality of the food unless its a wood stove for things like pizza cooking. I don't disagree that the environment is important but things like stoves and air conditioning are laughable places to start to better the environment. Maybe improving means of mass transportation like overseas shipping and airplane travel. Those would improve our symbiotic relationship with our environment more than banning gas stoves 😊 but back to the topic I think these two could make a 5 star meal on a grate over hot coals 😂 they know their stuff!
