I was in Japan for a month in May and spent 5 days in Fukuoka. You literally went to the same places I went to in Hakata, Fukuoka city. Went to that Ichiran and I also ended up at the same end point with the food trucks and picnic seating due to the Yatai's being so crowded. It was really cool to see those places again through your lens. Next time you're in Japan try hitting up Hokkaido with Sapporo and Hakodate. You can try Sapporo style ramen which is miso based and go to the brewery. You should also try hitting up Kitakata which is where my family is from for that style of ramen which is soy sauce based. Those are the other two most famous styles.

Asian fried chicken often has rice flour in it, which makes it extra crispy. Mix some in with your wheat flour when you fry chicken. Also, double fry. Par cook your chicken at around 325F, then rest it on a draining rack, and do a second finishing cook at 375F.
secret to getting a seat at the Yatai is not go to the ones near the river, those are like tourist traps (especially now thanks to social media). Just find one off at the side of the road away from the river, I've gone to two where there are no lines and the food was amazing. Avoid the river.
I did just over 3 weeks in Japan earlier this year. They are so humble and orderly. You are correct about the queues everywhere which is a good thing. In western society people are selfish and everyone only cares for themselves.

I'm glad that he is enjoying Japan. If he wants some bath he can go public bath house named "Sento/銭湯" which is about $4, or more luxury "Super sento/スーパー銭湯" which about $20 to $40. And I really recommend him to go onsen especially local one. Its fucking good. GO ONSEN!!
You mentioned Mexican food being good in Japan, well they also have Japanese food in Mexico and it’s very good as well. I ate at a Ramen place in Pachuca back in 2008 it was delicious

You can’t plan a similar experience yourself and get the proper time of the year down for the weather!
