Excellent points mate. I can't count the times I've had friends message me asking if the chicken in their fridge is OK to eat 1 day after it's use by date. My answer is always bloody well smell it! if it smells like it will unalive you, it will probably make you sick, if it smells like raw chicken it's fine! It makes me so mad, I know people that will just chuck food it away and not even entertain the idea of using your senses

I plan using AnyList - it's really good. I also have a chamber vacuum sealer and so can seal up stocks, sauces, leftovers. It was expensive but I use it most days and it's almost paid for itself after a year. Very little waste these days but it does take work.😀

I can put food in oven and pan and follow a recipe but to look in the cupboard and think I can put all this random stuff together and make something amazing is beyond me. That would be amazing thank you.
But apparently you're supposed to see "oh we're having curry today" and then go out on that day and buy the fresh stuff (which is likely overpriced because you're buying a small quantity). even though most fresh stuff, correctly stored, won't go off in a week. No mention of doing proper weekly plans, like having a few meals which are different enough to be interesting but use the same base of ingredients. Oh well, I guess it's not trendy enough.

I feel like I answered a lot of questions in this video but clearly Andy is a meal planner and thats cool so let me spend a few minutes to give you a good reply. Meal planning is totally fine and if you have looked at my back story and journey you will see that I worked writing meal plans and developing meal plans for many years and they have their benfits but they also have their downfalls! it's not about being trendy it's about common sense, I have found a principle that works for me and many other I have spoken to over my time as being a chef. You are not going to save money buying 10 courgettes as opposed to buying 1 or 2 courgettes. What I am teaching people here is if you dont have a plan then dont shop aimlessly and buy produce you dont have a plan for. If people are like yourself, Andy, and love to meal plan and buy and cook in bulk, then marvellous! I am not one of those people as it doesn't suit my lifestyle. It's nothting about being trendy thats what my fashion, tattoos and hair cut is about! Not my approach to cutting out waste its just common sense which it feel like you dont want to entertain when watching my videos! I hate wasting food.. I plan my meals weeks in advance (got a big magnetic A3 meal planner on my fridge door) and I waste next to nothing if I can help it.. I've said before, potatoes once cooked are great to store in the freezer, whether par boiled ready for roasting (just defrost on the day you need them). Mash potatoe, noisettes, croquettes, even making your own par cooked/fried chips (fry till they start to change colour slightly, remove from oil, leave on a paper towel to air cool, then bag and freeze).. I'm 50 years old, and it's not done me any harm.

Interesting, I'd love to understand how you've come to believe that and understand your perspective better. From my conversations, a lot of people see food waste as a major issue not only because of its environmental impact and the resources used to produce food, but because of the cost of throwing away food. They can see the pennies and cents going into the trash. But it sounds like you might have a different take on it. What makes you feel that food waste isn’t a problem?
@ Throughout most of human history, people have struggled with a lack of food and starvation (unfortunately, some countries are still in that place), but our Westernised, highly sophisticated cultures have eradicated that problem. In fact, our health issues are now caused by an excess of calories - maybe a nice 'problem' to have... Or we'll unable to get our biology to change quickly enough to adapt to the abundance and we'll all be obese and diabetic... Anyway, its surely better than starving. The simple fact we can 'waste' food is evidence doesn't matter. At best, it's a first world problem. Like most people, your preconception is that the 'environment', or, to give it its propagandist name, 'climate change', is a) caused in part by food waste or b) can be managed by reducing food waste, However, there simply isn't any concrete evidence to support this claim. Most environmental claims are amorphous, and as far as I can tell, are designed to create feelings of fear and guilt in the population in order to allow Government to increase taxation. My view is simple; the 'environment' is here to support human growth and prosperity. The 'resources' used to produce food must be used to support human beings. Otherwise, were going down a Malthusian path. Or, worse still, I've heard people describe humanity as a parasite or cancer on the planet. And in response to the financial cost problem, how many people do you know that are living on the streets for wasting food? It's not an issue. It's only a problem in the sense that we (westernised cultures) have decided to make it a problem. If you can give some concrete examples of the problems food waste causes, I'd be happy to read them. Even if we put aside the environmental arguments, there’s still an economic and resource efficiency question. If we’re investing land, water, labor, and energy into producing food that doesn’t get eaten, does that not represent a missed opportunity? Do you think we should scale back how much food we are producing to save on resources if people are just throwing it away? You wouldn't make more of anything if you knew people were just throwing it away, if anything you'd make less to increase demand/scarcity... Also, could those resources be redirected in ways that are more beneficial to people? And while food waste alone might not be putting people on the streets, wouldn't reducing it help ease financial pressures for both individuals and businesses? I’d be curious to hear your take on that. If food waste isn’t a problem, would you say there’s no meaningful downside to it at all, or do you see any areas where it might make sense to address?
So basically you generate another load of waste - time, money and pollution - just buying what you "need" on that day. Buying two chicken breasts for more than the cost of a whole chicken which will do 3 or 4 meals (eg roast, curry, stir fry, soup) Most people know what's going on in their upcoming week, so do a week's meal plan. I do a month's meal plan but buy once a week. And then you LEARN what to do to adapt your meals if the plans change. PS Ooh, edgy, he said fuck. Wow.
