  • Freshly made kimchi
    This is different than the fermented kimchi. This is more like KIMCHI SALAD where it’s freshly made to serve known as the Geotjeori.
    Typically you’ll get this type of kimchi as a side dish or with your hand-cut noodles (Kalguksu). BCD is def known for their freshly made kimchi.
    It was hard to edit this down to 60 second but let me know if you want me to drop the full version here.

    7 pounds cabbage
    50g salt
    4 cups of water
    sit for 30min
    rinse 2 times
    dry for 30min
    blend
    150g onion
    4 tbs garlic
    1/2 tbs ginger
    150g korean pear and apple
    1/4 cup shrimp paste
    1/4 cup fish sauce
    in another bowl
    2 cups of pepper flakes
    add in the blended sauce
    3/4 cup corn syrup
    ferment 1hour
    2 1/2 cup of water in pot
    high heat on stove
    1/2 cup rice flour
    stir until boil
    add rice flour mixture into red sauce
    add everything to the cabbage

    we made 7 lbs of kimchi using this recipe, it's our first time making it and it came out soo good!! but soo spicy, and i'm mexican so i can handle my spice but damn this is SPICY! and sour! we've been going through our batch lol. def gonna make this again!! 🔥

    Taste so good, I went a little light on the gochugaru (can't tolerate spicy foods too well), and instead of shrimp paste, I used fish sauce. It was divine 😋

    쉬운 거 맞음. He said "easy" and yes, this is an easy version. For those who complain that it is not easy, you gotta see the whole family working a full day to prepare the amount of kimchi enough to fill a fridge full. His recipe is also simpler compared to what I know and have seen.

      I get a kick out of how Koreans jam as much food into their mouths as they can, eating bulgogi-in-lettuce wraps so big they look like they're chewing on a balled up sports sock. Apparently this volume of food in each bite 'enhances the experience'. I love it. The only thing popular Korean food I've never tried is makgoli, the fermented rice drink. If it tastes like Yakult, I'm gonna love it. Haha!

      There are hundreds of variations of Kimchi. Sweet, super spicy, different textured. I like Kimchi because there are so many passed-down recipes from generations. Good luck with the process!

      His way is a bit non traditional but authenic kimchi doesn't require much ingredients.
      Good way to show you know nothing.

      ​@@cloveresraa yes you can use anything else with an umami flavor to replace the shrimp. More fish sauce, Anchovy sauce, miso, broth powders/cubes, Yondu, doenjang, light color soy sauce, etc
      And for the corn syrup add any other liquid sweetener like plum extract, honey, agave syrup, rice syrup, maple syrup, etc... Maple and honey might be a bit strong Flavored for this application tho. Traditional recipes call for blended Asian pear. So you could yse that or any apple or pear. Or even just sugar 🤷‍♀️

      You dont gotta cook anything. You can omit the rice flour stuff. You can make a kimchi with just the flakes , garlic onion and fish sauce.

    I have made 2 different kimchi recipes, and I never thought of just throwing the shrimp in the blender with everything else. That makes everything so much easier and so much sense!
    Why don’t other creators do that?? I always see them chopping it up by hand in videos, so that’s what I did too 🤣

    I am "real" Korean, and I wanna tell you guys there are lots of sorts of kimchi. There are different ways to make kimchi differ from um..... area? of country.(States? I mean)

      Some ingredients are expensive to buy shrimp paste,rice flour, others hard to find asian pears,and asian apples. You cant find fresh pears. Also no shrimp paste here dont think my store even carries shrimp. Small store in redneck trailer trash county

    Just made your easy kimchi recipe. Tastes great fresh for tonight with my seafood tofu soup and rice but will ferment it for couple of days room temperature then store in fridge. I have heaps left over sauce - will it freeze well? for how long?

      Get some Kirby or mini cucumbers, slice cucumbers, salt for 30 min, rinse and use the rest of that sauce. You can also make Pa kimchi by getting 6-8 bundles of green onion, slice and salt the green onion in fish sauce for 30 min and mix with left over sauce.

    Blend together
    Onion
    Garlic
    Luya
    Pear, apple
    Alamang
    Patis
    Chilli powder 2cups
    Rice flour and water mixture.
    Whooh!

      How was it? I've seen quite few versions that use either vegetable broth powder, soy sauce, seaweed powder, or miso in place of the fish products to still add salt plus that umami flavor. I've been wondering how good it still comes out. I also think you could use doenjang, Yondu, or maybe even mushroom seasoning. I'm going to play around with some of these options 👍

      Corn syrup is common to use in asian countries and it is used as sweet sugar which gives stickiness it needs and corn syrup is actually really common to use in dishes
