I get such an enormous sense of serenity watching someone flawlessly executing a craft like shown here. It was an absolute pleasure watching this and supremely instructional and insightful. Thank you very much!
I ordered two of these based on the reviews. ua-cam.com/users/postUgkxqmKabisEv81ul5v7OhvVxxOpt2CJruI- Received them on time and they look good. I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.
I just had to pause the video in the middle and type a few things about this guy. It's very hard fro me to say that he is my role model cuz I'm 36 years old.I sometimes don't understand the words he says but his videos are so helpful. I am jealous of his knives and his knife skills.
Beautiful. I Just speared my first wild turbot but couldnt bring myself to fillet it, so I just steamed it whole with butter white wine and parsley. Magnificent fish.
This video was incredible to watch; so user friendly. I am very inexperienced at seafood preparation but watching this gave me the confidence to try unfamiliar fish, and the way it was explained made so much sense. Thank you I have just subscribed to your sight
Don't try to fillet a fish without a fish filleting knife, you'll destroy it. To all beginners- invest in a good filleting knife, it's worth it. Get quality! P.S.- btw, great video, that's how it's done, bravo!
Sorry for the delay in replying! We use Victorinox knives, they're relatively cheap and last years. This is a 7" flexible filleting knife and can be bought on Amazon and other sites for around £20. Make sure you keep it sharp with a steel and it will last years
Dear Duncan What exactly does prime fish mean ? why do you have to mention that tight to the head thing ? what good does that do while filleting ? Thanks
Typical me - just watched this AFTER filleting a large turbot. I think I did a decent job, but it took me a darn sight longer and didn't look half as easy!
It's easier to use something like a buck skinning knife for almost every fish. the only fish I wouldn't use a stiff blade for is stingrays, and sharks.
What skill! So smooth. That said, it has always bugged me in general that half of the fish is not edible and goes to waste. Does not seem very efficient from an environmental point of view.
the best bit of the fish you throw away!! What a wastes of fish!!! The fillet is not the best of the fish!! If you steam the fish whole and eat it of the bone, that is the best way to get the most flavour of the fish.
Man , I've seen people that were good, but You Sir, are an artist!
This is how instructional videos should be made.
Brilliant.
That’s the best example of how to fillet a flat fish I’ve ever seen. Professional at work 👏👏👍

Thanks
***** ohh thank you so much Rory,I appreciate your concern.
he just means that keep as close to the bones and the edges of the seperation between the head and the body to minimise wastage of meat.
Beautiful technic
Great video. I am just about to go an butcher a turbot.
I have never seen a one fillet, per side on a flat fish,,, kooooooool, I try this next batch I get thank you..

Perfekt ,,,Brawo...
but how do you fillet a tame turbot?
I am learning.
Look easy, just tried on headless greenland turbot which supposed to be easier because it's larger. Total 1 hour for 2 fish, and messed up so bad. LOL

You can use the head for stew and the bones to make broth
@@isabellebillingsley8487 'Head for stew' is gross!! Give it to the cat or plant it in the garden.
Woop there it is
Error at 1:05. He missed some valuable meat. Otherwise, flawless.
I don't see a huge difference between this flounder, fluke and halibut.
Much more tasty, trust me. Very rich taste.
Great video! Very skilled
Seems to easy :)
If you fry it it the fillet doesn't taste as good as the chunks of fish fried as a whole. The cartilage and bone give it it's flavor, just try it!
Siempre hecho con oso
VİCTORİNOX
Bruhhhh 😂
you made that look harder than it should of been.
it would of been easier to get the 4 fillets out of the fish then trying to get 2 whole fillets
He isn't quarter cutting it though..... The video is an instructional one on a cross cut fillet. He also does a separate one on quarter cutting. 🤦♂️
@@thebellsfishmonger I just been your your channel. I'm impressed you got new subscriber
u forgot the sides bones dude!..
No turbot kettle 0/10
