I've been wanting to try making these for so long. I've been watching Matt from Meat Church for some time now. Learned so much from him. These look amazing! May I ask why you cook on the middle rack of your smoker and not the bottom? I'm just curious. I only have 2 levels on my Traeger and always use the bottom. Wondering if there's a difference. Great cook as always and can't wait to see how you use these in another cook! 🌞👏👏🌴💙
Thank you so much Michelle!! There wasn’t a specific reason - I’ve just found that right over the pot can get a bit more warm, so I like a little clearance - that said, these would have worked out just the same on the bottom rack. Much love, would LOVE to see your take on these!!🔥🔥

Thank you Bobby - we have over 400 videos in the last 2 years, with nearly 390 of them griddle cooking videos. I think we have 2 or 3 air fryer cooks, and maybe 7-8 smoker videos. We do 3 videos a week, maybe you don’t get all of the notifications? We have only done 2 smoker cooks and zero air fryer cooks since January. Hope this helps a little bit! Cheers brother!
Do you guys have trouble finding pork belly? I guess I need to find a butcher shop. The grocery stores here never seem to have them, even Sam's club. And I live just north of KC and I can never find them!!!

Those look about as good as they get! Please try this: turn into basically a Po-Boy sandwich with a Caesar salad "slaw". And any other crisp veg that you may enjoy.
