I grew up in an orphanage. The staff who made the best pork chops was a young black lady. She fried them, baked them or cut them up and made them into a delicious sandwich. I will always remember her and her pork chops.

I LOVE the way you "teach" It's so real! My grandpa was a CPO and a cook in the Coast Guard for 29 years. He fried the best pork chops on Planet Earth. And yours look just like his. I remember him flouring his twice! I've tried many times and mine are never very good. You've encouraged me to try again. Bless you good!

To keep the pork chop from bubbling up, you need to cut a couple of notches, completely thru to the meat, on the outer fat ring around the pork chop. It takes the tension of the fat from shrinking as it cooks and allows the meat to stay flatter. Great video and looks so delicious and perfect.

My uncle used to make the best pork chops in the world and I've tried for years to make it like his. Yours looks just like his, i can smell it through the phone! So nostalgic it almost brought a tear to my eye!!

I like to make a couple of cuts through the fat around the chop and just down to the meat. That cuts through that thin tissue that shrinks and causes chops to “cup” when fried. Doing so keeps them nice and flat when that tissue shrinks during cooking.

I use a wooden spoon's handle to test my grease. If the grease bubbles around the spoon's handle, the grease is hot enough.
I've been seasoning my porkchops 🥩 and flour like you EXCEPT I use straight water to dip my porkchops into. I coat my porkchops 🥩 twice, as well. The water 💧 and cornstarch/flour mixture makes the most crunchy, fried chicken, porkchops 🥩 😋 you've ever seen! Delicious!! ❤

listen here!!! Perfection. I can’t do eggs so I used mustard instead and my standard seasonings (added tumeric + hot sauce per your recipe) but that “let it rest”, double flour, and “leave it ‘lone” is top tier! That tumeric adds a nice flavor. I’ve never understood why my bros & uncles would get a pokechop sammich. I mean…it’s just a porkchop and bread. What that bread do?!?! You inspired me to finally try it as a sandwich. l fried it up tonight and slapped it on some bread…baybee! that thang was GOODT! That crunch too! Yeszuh

A trick to NOT having those big bubbles form in the middle of your chop is to cut slits along the “fat” side of the chop every inch or so. I use kitchen scissors & cut into the fat every inch or so. The bubbles form from the fat tightening & seizing up, when you cut slits into the fat it can’t tighten up.

Just wanna to circle back and thank ya for the recipe Sis… I’m from the West Indies and our fried products ain’t the same as southern folks who in my opinion as a chef do it the best ( no offense to know one else ) and let’s just say today I got my corn bread, collard greens n kales , bake beans and pork chops and I feel like a southern boy 🤣😂…. Thank you so much for your help and recipe, have a great weekend and God bless

I never made fried pork chops in my 44 years of living. I made these for my husband and son. They LOVED them! Only thing I did differently was smash them with a meat pounder so they weren't so thick.

These pork chops look deeelicious. I am looking forward to trying them. I love your commentary as you describe how to cook the chops. I have a question- the very thin metal “tongs” you used to pick up and turn the pork chops with - where did you get them. I have never seen any like those. Love your videos. 🤗🤙💕

I’m so glad I saw this post. Duh, I think I know why I burned pork chops on my first try a few weeks ago. I didn’t know to add that much oil. Nor, not too much garlic. Thank you for your advice.

I use the handle of a wooden spoon to tell when the oil is hot. The oil will bubble rapidly around the wood like its trying to fry it.
