Hi mate, great video! I dive for turbans all the time in Sydney. The larger Military are harder to find than the Sydney turbans but also way tastier! Military Turbans have a smooth door whereas the Sydney has a spiraled one. There’s a couple of things I’d suggest if your up for it. The main reason these snails aren’t as popular is because of the work involved, but some patience and good ah fling makes it super worth while. Don’t boil or steam them, the cooking process makes them very tough, and you can’t properly tenderize after cooking. If you take a sharp knife and hold the turban in your left hand with door facing outward to the right, insert between the door and the body of the shell, imagine you can see through the shell, you want to cut the foot off to release the meat with the door. Once off, take your finger and feel for the meat inside the shell, it’s connected to the inside of the shell, if you run your finger against the shell and under the meat you’ll dislodge it. Here’s the best part but takes some practice, slowly pull the meat out whist gently shaking it out, you should get the remainder of the meat and the guts. This meaty part is the most tender of the snail, completely different texture to the foot. If you’re down for sashimi this one is great! The foot has more of a giant clam texture. My favorite bit is a part of the guts. If you look at the guts you’ll see a spiral pattern half way down the gut sack, the edible part is from just below the spiral to the end of the sack. It’s honestly like foie gras of the see. I only take the yellow colour ones as these fast way better than the black/green ones. I’m thinking of making a vid showing how to do the above. You’ll be cursing at the thing the first time you do it but once you get your first out you’ll be smashing each out in no time.
@@joek292 yeah absolutely, always an option as well! Just put inside a tea towel and go easy. This method of course is super quick but guaranteed to be messy and meat isn’t as clean as carefully extracting. But also just depends on what you’re gonna use it for and where you’re dispatching the catch. Each to their own!
Here in South Africa, we boil them until they start squeeling and basically fall out the shell. When then remove the crap, rinse and into white vinegar. Left over night and smashed the next day :)

the way to get them out boil them for a 5 min or so then let them cool get a small hook in around that thing you called an eye and twist them out and they will come out anc chop the black part off the of the meat

Hey mate. These snails are delicious. The best way to get them out of the shells is to steam them. They will slide out with no effort at all. You can then slice them paper thin or smash the crap out of them to tenderise. I cook them in a panang curry with coconut cream. And a little kaffer lime leaf. Bloody awesome. I can't compare them to any other food as it was a totally new great flavour I will be going back for.

If you want to clean the black of abalone dry the abalone then rub cooking salt onto it and let it sit for about 5 min then simply brush it off.
