**Pumpkin Cream Cheese Crumble Muffins
1 1/2 flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice
1 1/2 cups pumpkin puree
1/4 cup melted butter
1 teaspoon vanilla
1 egg
**Cream Cheese Filling
8 oz cream cheese, softened
1/2 teaspoon vanilla
1 tablespoon flour
2 tablespoons sugar
**Crumble Topping
1 cup flour
1 cup brown sugar
1/2 cup melted butter
1/4 teaspoon salt
1/2 teaspoon vanilla
Fill muffin tins 3/4 full. Bake at 350 degrees Fahrenheit for 20 to 25 minutes. Enjoy!

We just puréed 25 sugar pie pumpkins from our garden, and guess what? We didn’t plant them. God did! They were volunteers. Now guess what I’ll be making first with it? 😉 Thanks for the great suggestion!

I will definately be making these!! I need to do a batch with no eggs for a family member who has an allergy. I wonder if they are needed? The pumpkin seems like it could be a substitute itself.

We have never made them without eggs. So it would be a bit of an experiment. Let us know if they turn out for you if you decide to try it that way :-)
Beautiful video. The muffins look delicious- I’m going to make them this weekend for sure!! Question though, did you end up with extra cream cheese filling? I wondering if there is something to use the extra for. With the flour in it, it would need to be cooked.

A sugar pie pumpkin will be the tastiest, but a big one will also work. I would recommend straining the purée, since it will have some fibers in it.
