Your startup costs are very incomplete. you need a vehicle to transport food and equipment. tables or benches to work on, lighting if the venue is open after dark, signage, a tent or canopy to operate under ( you can't operate legally in most areas without one) gloves, aprons, insurance (any festival , farmers market etc. will insist on probably at least $1,000,000 in liability insurance and will want to be listed on the policy). You need cleaning supplies, and trash handling equipment. I have run concessions at hundreds of events over the years. start up costs, in my experience would be at lease four times what you are suggesting, assuming you will be using a vehicle you already own. That being said you can very quickly recover all of your start up costs, probably at the first weekend that you participate in.
There are other expenses to consider, like the cost of food and supplies, rent for the event space etc. You also need to use a commercial base kitchen in many jurisdictions. Commercial kitchens need to be available for inspection without prior notice. A home or cottage kitchen raises issues with this, because the government is not allowed to mandate an inspection of a home. It violate your 4th amendment rights. In most states you will also need to have a certified food safety manager at each location you operate. This can also cos several hundred dollars per manager. You will also need workers comp insurance if you have employees.
I like the idea very much. It's still a low startup cost, most if not all of the food products are non perishable, so if you don't need much if any refrigeration and if you get rained out, you are not discarding valuable food products.

From everything you posted, it feels discouraging and just too much trouble to try to get into vending at events such as fairs, festivals and markets ... or anywhere else for that matter. I heard that it isn't easy to just up and get a space at a festival or other big event whenever we feel like it. They have to accept you, right? I don't think they just let anyone get a space at a festival or other big event. This is also discouraging in that it would be hard to be a vendor at an event. So, we end up spending a lot of money for equipment, supplies and then go through the trouble of getting the proper licenses and permits, and then only to find out festivals & such may not even accept you? Plus, everything else you mentioned also seems be a heck of a lot of trouble (and expense) to get set up & going and also the proper legal compliance. I've been wanting to get into selling some type of food at events, but adding all this up, now I'm not feeling that great about it.

Furthermore, what are the logistics behind it? Like...do I make the batter in-situ or do I bring it from home? It'd be kind of hard to make it in-situ actually, but would I need to register my kitchen were I to make the batter at home? I'm pretty sure you can't in Oregon if you're gonna take it to a fair or something.

@@projectamis4772 I did a good stand this last summer selling tacos, chips and salsa and a couple handmade drinks. We did have access and full permission to use a local restaurants commercial kitchen as well as able to order items through them from Sysco which helped to keep food costs down. We purchased collapsible canopies, fold up tables, grill, garbage bins etc from Walmart. Amazon is a great place to look as well, just mind the reviews lol. You might need netting to keep bugs out and other debris, depends on location and local requirements. The local health department should have requirements and good info online. Good luck!

I've had this business on my radar for more than a year. This is a highly profitable business and the item is what I call a "show food". Meaning when a person see someone w/the stick in their hand, they're going to ask where did they get it from. I made a list of items for what's needed and I looked at yours (which is missing quite a few key items like a mixer, table, etc). The machine you have linked is very low quality and won't last long, it's bottom tier so it's worth the investment to get a $200-250 machine. I would use a slightly better mix than one that can be found in any grocery store since people are familiar w/that brands taste. It's best to get something that event goers are going to be "wowwed" about. 100 sticks is definitely not enough for even a small event. I'd rather have too many sticks than not enough and run out and leave money on the table. Great video!

Some areas have professional kitchens that can be rented by the hour. Many businesses operate out on a single space. They are inspected kitchens. you need to schedule the time you need ahead of time. There is usually a monthly fee and hourly charges for time used. You usually need to guarantee a minimum number of hours per month that you will be using the kitchen.
