I don’t know if you picked up on it, but the line Cloud’s mum says “Run Cloud, run away, you have to leave, you have to live” is what Sephiroth says in the alley near the beginning of Remake. We didn’t really know why he said that at the time, maybe to make him not get involved to change his fate, he probably did too, but Cloud’s reaction makes more sense now as he was also teasing him with his mother’s dying words.
The fact that they give Cloud and Tifa so much angst already bodes well for their relationship through the game! We never see them fight with each other so I'm glad because this shows that they care by fighting about it.
I am loving your playthrough so far! I really appreciate that this one is more of a Let's Play and less of a stream VOD, I always get distracted by the chat and it takes me out of the immersion. Looking forward to the rest of the series!

Their is another noticeable detail from the demo to the full game! The eyes of Cloud, in the demo Cloud’s eyes are more grey, in the full game Cloud’s eyes are green.
You don't get the sheet music till later in the game. They included it for demo purposes only just like they did with certain materia and synergy abilities

Yeah girl I've played the OG FF7 game myself and the ones that came after including part 1 of the remake! Good thing you did too otherwise you wouldn't be knowing certain things already. Like how this was a made up story Cloud was telling about that time ago and he was putting himself in Zack's place in his mixed up memories story. Also even before Sephiroth went mad and burned the village I still never really saw him as the hero type to begin with.
They even have the securiry officer (Cloud) tease "Cloud" about him having a girlfriend in Nibelheim. That's 100% what Zack must have asked him instead.

Tifa is toxic, not thinking of Clouds perspective. Thinking Tifa died, OF COURS he would be not there for her! If he knew she was aliva, yeah, he would be there, but the Turks just took Cloud and Zack, clesning Nibelheim. She cant expect things to go back, where she was center of attention while Cloud was lonely.
Really can’t help but feel like you’re oversimplifying a complex situation. Tifa lashing out at Cloud in that moment is from something that’s been clearly building up for a while. You have to see things from her perspective. From Tifa’s perspective, Cloud just shows up in Midgar one day, her first time seeing him since he left home. He’s a bit of a mess, but she rolls with it and tries to work with him. Every once in a while, though, he’d say weird things. Things like how they hadn’t seen each other in five years (when she thinks it was seven). He also won’t talk about where he’d been or what he’d been through. So she just rolls with it. Tries to move forward. Then he sits down and tells the group, beat for beat, the events of the Nibelheim Disaster. What was said, who did what, what Tifa was up to. But she’s just sitting there lost because he *was not there* as far as she knows. Her asking where he was when she was hurt, where he’s been these past five years is her hitting a boiling point of not getting any answers from Cloud. Why isn’t he telling her things? How does he know the things he knows? What is going on with him? And if he really had been there back then, what was so important to just leave her bleeding on the floor. And all he says is that he can’t tell her. From a neutral perspective, Tifa’s behavior isn’t the toxic one here. She doesn’t know what happened to Cloud. She doesn’t know what’s going on. She wants to, but he shuts her down at every turn, seemingly keeping secrets, secrets that involve her, from her. It’s understandable she gets frustrated. A frustration, it’s worth pointing out, that she puts away quickly. And is addressed again the first quiet moment the two get later. What we’re seeing is a very understandable, if imperfect, reaction to a situation. That doesn’t make Tifa some terrible, toxic person by literally any means. It literally makes her a person with emotions.
