@Marina The taste should be dry outside but tender inside! we usually use duck but you can try in chicken of course! I will suggest don’t use the young chicken but use the old one, you should find them in frozen fridge in any Asian shop. Cause the one in grocery shop are fast grow chicken they are normally 6 weeks old before get killed. But the one in Asian shop are normally 4 months old. The taste and flavors are much more better! I love breaking down and eating ducks more than most things in life. I am American born but once attempted Peking duck in my little apartment for my 8 year old girls. I had the duck standing up salad in the fridge with a USB fan blowing on it for 55 hours. this recipe actually looks easier and I know the taste and texture must be outrageously good. This is another reason I adore Chinese cooking, they have been refining processes for thousands of years and there is just no substitute for experience.
I love your cooking here, everything is descriptive and concise, leaving me very confident in trying things you show. I wonder in this one if the dehydration process would be helped by being smoked low temp.

Hi Mandy! If I started with a lushui that already has salt added, how do I go about diluting it for this recipe? I'm assuming salting the duck is mandatory but do I need to make a completely new unsalted lushui every time I make it?
i have had this at two different restaurants, one called "extra crispy duck" and the other called it three cooked duck. whenever i eat at chinese restaurant this is what i order. i suspect it also is "pre made" because it takes about only 20 min.

This wasn’t all that difficult just time consuming. But I’m definitely going to give it a try once my wok comes, and yes I ordered yours lol I like that it comes with the lid and wok spatula.

It is usually a center piese on the dinner table. You can make some vegetable stir fry as a side dish. we normally eat it with rice.

For an English title I would call it a spatchcocked, salted and soy-marinated, thrice-cooked duck. That’s a mouthful. Jiang ban ya is so much easier.

We do braise pork trooters in the Lushui brine but we don't dehydrate the pork like how we dehydrate the duck due to the skin texture.
