Autoclaves aren't bad! Like any piece of equipment, it's all how you use it. In general, we tend to like the tequilas that are cooked slower, longer, and at a lower temperature. Some autoclaves, like the one at NOM 1146, do just that. So don't write off all autoclaves because you'll be missing a lot of great tequilas!

Thanks! Did not realize some cooked faster. Now I'll ask....what is the time it take to "cook" the agave? What is slow? Thanks again, great site. @@tastetequila171
