Great interview! What distillery is producing the agave spirit that’s sent to Texas? And what’s the cooking method after the diffuser?

The distillery is NOM 1619 (www.tequilamatchmaker.com/distilleries/363-productos-de-jalisco-s-de-r-l-de-c-v), and the cooking method is with a boiling tank (no acid).

Amazing interview. I have a greater appreciation for agave now. I'd love to try this.

Isn’t agave vodka being made already by Dan Aykroyd’s Crystal Head Onyx Skull Vodka ?

I'm still having a hard time with the idea that you distill something to 95% alcohol, then charcoal filter it, then water it down and it will still taste anything like the base ingredient. Potato vodka doesn't taste like potatoes just like Corn vodka doesn't taste like corn...
I want to taste it just to validate my thoughts!

Exactly our thoughts going into this. So we did the side-by-side and noticed a difference. Definitely worth the experience, though.
