Watching Chef Hiro or Taku break down and prepare fish is always humbling. Such amazing skills compared to my meager ones. And its not like I've never caught and prepared fish!
I've been watching the videos of a gentleman who makes a living preparing and cutting fish for sashimi. He uses your technique, Hiro-san, but he's been doing his job for so long he races through the fish preparation. It's nice to be able to watch the filleting and skinning being done at a far more sedate pace, and to hear the tips being spoken in English- the other gentleman speaks only Korean, a language I don't understand.

That looks amazing! A month or so ago, I asked about what I should try being a sushi newb. I had my first Dragon Roll from this local place that is really good! It was awesome! Slowly but surely venturing into new options. I would really love to come down to Miami one day and taste what Hiro can do. I am sure the video doesn't even do it justice.

Red Grouper are the most prized Garoupa of the Garoupa Species, this, size is amazing Steamed, with fresh scallions (spring onions) and a light soya Sauce and hot oil.... Cantonese style
There's nothing wrong with american rice. A lot of american produce is BETTER than overseas. Canned tomatoes like Bianca Dinapoli are arguably better than italian ones.
side note: that building was built by a famous architecture office from switzerland, which is called Herzog & De Meuron. They designed many beautiful buildings. Thanks for sharing✌🏼

I'd inhale the tempura while it's still Hot, then slowly savor the sashimi and sushi in alternate bites!
There was that one super size big mac sushi where hiro didn't look impressed.
I have to admit though his English has gotten really good more confidence on camera.
