      when my Parisian friend ordered this in a restaurant in Paris, I just will not try it when he offer a small amount to taste. I think my stomach cannot handle it.

    My boyfriend ( exchange student to America
    ) is italian and French, he is heavily influenced with both cultures and their food, I'm trying to make him all of his favorites and this one seemed most like what he described, thank you! I think he will love it.

    You are right worcester sauce is essential! In Slovakia we add minced garlic, then it is great with toasts. Bless you and cook on.

    I make this as a nibbly for a cocktail party. I surround it with anchovy fillets, red onion, capers etc and guests make their own little bite on a slice of baguette.My secret is to anoint the whole mound with about one ounce of the best cognac in my home. Try it. Its sensational!

      Jimbob his version in the video is the best ive ever had. i feel like he made it for americans because with the pickle, onion, mustard, and ketchup it really ends up tasting like an american burger. a fresh, clean version of a burger.

    French food can be very intimidating oh, but the older I get the more interested I am in food like this. This looks absolutely amazing. I'm going to try cooking this with my dad when I take home time at the end of the month. Thank you for this recipe.

    For the people who really wouldn't love raw meat anyway. You could chop the meat as done, mix it whith salt, lemon juice an a drizzle of balsamic vinegar and let it overnight in the fridge. This way the meat will cook without being heated. And it will keep some fresch taste in comparison to cooked or fried meat. And then you can mix up the rest of the ingretients as shown. But anyway, great recipes man!!! they are really inspiring. I enjoy it ;-)

    wow! Korea has a similar dish called yuk hwae. Raw beef mainly mixed with soysauce, sugar, sesame oil, sesame seed and raw egg yolk with a side of sliced asian pear and thinly sliced garlic. Its cool that both countries' recipe uses egg yolk!

      All that I worry about is that itty bitty little tiny minuscule less incomprehensible problem (for me and some people at least) I am afraid on eating meat raw as it may contain parasites and harmful elements that can be destroyed by cooking.

      Toronto Carbivore except it's not a tartare. tartare is a raw meat/fish. it cannot be a veggie.
      that being said I'd rather have the veggie notartare

      Kitty..... Tartare is actually made with fish. A popular alternative is steak tartare, so if it can't be vegetarian then there can't be steak. Either way I would rather have carpaccio.

      +Robert M Nope, the dish is named Tartare after the Tartar people, who prepared a similar dish with horse meat. Then came the raw beef version, and even later the fish ones.

      yes in Germany we have Hackepeter (or Mett or Hackfleisch or Thüringer Mett ^^,) which is is raw meat that is nicely seasoned and served with raw onions.

    Great... your recipe is quite similar to the version I am doing, but yours seems to be the better one... the difference is the version au couteau and the oil before the other ingredients... and I can imagine that this will lift it to another level...       Steak tartare, lovely, really fresh smell, into the pan. Season, a tablespoon of lemon juice, to maintain that freshnes, lovely

      Yep, it's seared tartare, but it has to be cooked very quickly in order to build up a nice crust on the outside, and keep it raw on the inside. if you want to make a burger, avoid mixing all these ingredients in it because it will break up in the pan and render its moisture, giving a dry, mushy result (and it's a shame to ruin such a good piece of meat).

    Lol, remember one time that my roommate tried to cook the tartare with a recipe learned from Internet....he made one successfully and was quite satisfied, then he kept it in the fridge....and the other day I found it and pan seared it as a burger patty....

    I prefer to serve it mixed besides the yolk. Every customer or guest is wowed by getting to pop the yolk themselves. So luxurious! But great recipe and good idea with the foil!

    We have a similar dish in Korea! but we add sesame seed oil, some sliced or chopped pear, garlic and an egg yolk on top :) This looks really good too!!❤️

    I've always learned that the "real way" of doing boeuf tartare is using the inner thigh of a veal, which you scrape lengthwise by a sharp knife to produce what is not even a mince, but much finer. Personely I prefere it chopped in a mincer or, as you do it as "real" meat. Thanks for your uploads and your winning personality

    You really need to try Kibbeh nayyeh, it's from Lebanon (and the general region). It's raw minced lamb, bulgur and spices. It's so damn delicious. The Lebanese restaurants in my area only serve it one day a week, and if you come too late they'll be sold out. I always get a large portion for lunch and take half home for my dinner.
    I might have to try your tartare. I made it once ages ago for my dad and myself, but my recipe was much more basic and I can barely remember what it tasted like.

    Salut Alex! J'ai pensé que tu devrais essayer ma recette familiale du tartare ;)
    Essaye d'ajouter et de mélanger immédiatement les ingrédients dans l'ordre, C'est très important!
    Comment par la cuillère de moutarde ainsi que le sel et le poivre, puis l'oeuf, puis l'huile, pour faire presque une mayonnaise puis le ketchup, quelques gouttes de vinaigre (balsamique, brun ou de cidre selon tes goûts) puis la worcester sauce, le Tabasco
    Puis tu ajoute les mêmes légumes, mais attention! Mélange le tout avec deux fourchettes en même temps et fait en sorte de les croiser et de les appuyer l'une sur l'autre pour écraser et broyer tes légumes et libérer tout leurs arômes de fraîcheur qui en font vraiment un plat d'été! Procède de même avec le boeuf, ta texture finale sera ainsi juste un peu plus fine qu'au couteau seulement.
    Enfin la touche finale, un bouchon du meilleur whisky de ton placard, qui viendra ajouter des arômes surprenants de fumés et relèvera le goût de la viande
    Pour moi le mélange ce fait directement dans l'assiette, c'est plus conviviale et chacun peut donc l'adapter à son goût! De plus tu peux bien contrôler la texture de ta sauce avant d'ajouter le solide.

    in case you didn't know, as I didn't see it in a quick scan of the comments, worcestershire sauce is no vegetarian, it's made with anchovies. soy sauce or temari for the gluten sensative makes a close enough approximation.

    Put the beef in the freezer long enough to firm it up a bit, (but not long enough to freeze it) and it will be much easier to dice. Also, a clean tuna can with both the top and bottom cut out can be used for the mold.

    Lea & Perrins is made in the UK, but it's owned by the American company Kraft Heinz the same people who make that ketchup and what you might find more interesting is based on a Indian recipe.

    Great idea with the aluminum foil ring... then of course you can make any shape, like maybe a heart for Valentine's Day. Nothing beats presenting your bloody heart on a plate to your Valentine!

    Alex moi aussi je mets de la worcester sauce. Maintenant si tu veux faire le frenchie à fond les ballons tu peux aussi mettre du viandox, ça marche aussi
