    I managed to make this almost completely out of leftovers. I had some leftover nori sheets I dropped in my spice grinder to make a powder, that worked great for the topping. I used leftover chopped bacon instead of fresh strips. It was incredible! Between this and quiche I should be able to make a delicious meal out of practically anything. Great find!

    • @noxmoonyisadork
      @noxmoonyisadork 10 років тому +1

      You're very welcome! Ah well there are many versions just like for Okonomiyaki I guess. But there's two common versions. One is made from pureed red lentil paste, onions, green chillies, salt and a little red chilli powder..which you spread out and fry in a cast iron pan. Folks normally don't add anything to it since it's sth you eat with curry or vegetables or just plain. The second version is made from rice flour or even regular flour and you basically make a standard flour, water batter and then you pour it in a pan and add your favourite toppings like tomatoes, onions, chillies, sausage, egg, etc. So this one is more similar to okonomiyaki I guess. This can also be eaten without any toppings along with curry and stuff. Yeeah, sorry it got a bit long but I love talking about food XDD Thanks for your interest! :D

    Love okonomiyaki. I add about 2 tbsp to 1/4 cup of nagimo (sticky potato), diced mochi (unsweetened rice cake) or shredded cheese to make it more stretchy. I like to add thinly sliced pumpkin, zucchini, sweet potatoes or any veg you can use in a stir fry. I also use kombu or shiitake dashi. Alternatively, you could also use diluted consume or stock for more western flavours.

    I'm pretty late to the party here but in an attempt to imitate the okonomiyaki from a local restaurant I added some cooked instant noodles in the middle. It adds a really satisfying texture! I also forgot to buy cabbage so iceberg lettuce was OK to add a similar texture. Cabbage would be better though.
    Also, a couple of vegetarian substitutions (grumble grumble, gf is vegetarian, no bacon): vegetable stock and mushroom-infused soy instead of dashi and water, diced and panfried portobello mushroom for protein. If you have some dried shitake mushrooms then making a tea from those would be a good alternative to the mushroom soy.

    another good substitution for okonomiyaki sauce is brown sauce (hp sauce) you can add a little sugar to make it even closer to the real sauce. I think the aonori and bonito really make it!!! (don't leave your cat alone with bonito flakes though! they'll be gone in a second!)

    Made this using my gluten free flour blend, it has black rice flour amd black bean flour so the pancakes were reddish-grayish. I added a ton of veggies because I dont eat meat. I made my version of the sweet sauce too ( coconut nectar, mustard, soy sauce, a bit lime juice). I used vegan pork floss, seaweed and sesame seeds for toppings ;)
