    The full fish preparation has been edited. In the original I saw here Ray tells you where to place knives, how to cut the tins out and most importantly take out that backbone and not just pull it out, it's not that easy without seeing the full technique.
    When I saw the un edited version I copied Rays methods and performed the whole operation in just over 3 minutes.

    When i did the Woodlore foundation course in ‘95, he cooked a salmon like this. It was truly spectacular

    you can try having the fish parallel to the fire rather than tilting it to an angle when fully cooked just turn it over on a high flame just to put a crust on the flesh it will have preserved the oils because we put on the crust on the flesh after cooking the meat and since we use a high flame for the crust it wont be overcooked

    Tracks was my favourite programme at the time but I can't seem to find any trace of it online. Does anyone know if it's available anywhere?

    How would you cook it outdoors to preserve the oils?

    Never roast it skin side up,cause yes fat drips of.

    You still lose just as much of the oils like that plus it doesn't taste quite so good.

    good omega 3 fish oil goes away with his cooking method..
