Nde po kasing compact nung ginawa mo ung kinalabasan ng mixture ko, kaya nag add pa akong flour. May mga konting adjustment lang po ako ginawa kc nahirapan talaga ako ma achieve ang window pane. I made pandesal and cheese bread. But it turn out good and soft po compare sa mga previous na gawa ko. Thank you.
ok lang mag adjust ka sa tanzhong like dagdag ng flour basta don ka kukuha ng idadagdag mong flour sa measured flour natin na 500g. Sometimes kasi heavy consistency nya minsan malabnaw, nakadepende kasi yan sa kung gaano kainit milk na ginamit mo. niluluto mo kasi yung flour don sa milk, pag mainit magiging malapot pag hindi masyado mainit medyo malabnaw but that is just fine. pero goal natin medyo malapot dapat.

Thanks Mai for sharing this. My dough didn't rise the 1st try but they still tasted good. Proofing is a bit tricky and challenging here in Canada because of our weather. I checked online on some techniques in proofing, put the dough inside the oven with hot water in skillet on the lower level. Voila! It did helped in rising the dough and they tasted good. Next to address is the dryness of my dough.
Wow great to hear! One of my friend whose a chef there find it very hard to let her dough rise as well. It turn out dry. Are you weighing your ingredients or you're using measuring cups? Thanks.
If you're using meaauring cups, use a scoop to put the flour into your measuring cup and not use your measuring cup to scoop the flour or else it will be compact and will have a different weight. Your 1 cup will be more. It would be best to invest on a weighing scale if you are into baking bread but with muffins and cupcakes it's tolerable. Let me know what will happen on your next baking experience. Enjoy!

Malambot ang result ng aking pandesal but I have to use 1 cup of warm milk instead of half cup kasi matakaw ng liquid yong bread flour. The first one I tried following yong exact recipe ay matigas yong dough so I tried it the 2nd time using 1 cup of fresh milk and it was a hit. Thank you for the recipe. You are a good teacher! Hi Ms.Mai, as of the moment, my dough is proofing. The dough looks great and is elastic, however, I didn't use the fresh milk on the roux coz I didn't know what temperature exactly do I need to get the roux on the right consistency, So I tried using water instead, coz I did the milk roux twice.. at first it was hard to mix and the flour became lumpy, coz my milk is too hot. Second try, I did just warm milk but it's too runny.. so I tried doing it in water coz I'm wasting my fresh milk 😅 I didn't get the right consistency, but what I did is put it in the oven for ten seconds, stir.. another 10 seconds in the oven, then stirred it again.. until I got the right consistency (that you've shown in your video). If you can give the exact temperature for milk that would be helpful for me as I have my own milk thermometer. Hope my pandesal turns out well later.. Thank you so much! I subscribed already and will be checking your other recipes 😊🤍
It happens to me as well, if the roux is too dry just add more hot milk. Don't throw it. If it is too runny add more flour. The result depends on the flour you use and it's measurements not the milk as long as the milk is hot and emitting steam that's fine, we are actually cooking the flour. hope you are using a weighing scale for all the ingredients to be exact. Another technique is to cook the roux in a pan over the stove in low heat. Just remember too runny add more flour, too thick add more milk.

Pag instant yeast puede ng derecho halo sa ibang ingredients basta may warm liquid kang gagamitin. I had trouble with my instant yeast before, hirap sya mag activate pag di ko nilagay.muna.sa warm liquid. Depende pala sa brand ng yeast so I opted to buy yung mas mahal ng konti na instant yeast at hindi na ko nahirapan magpa activate sa kanya kaya derecho na. Pag inihalo sa warm liquid makakasiguro kang mag activate ang yeast mo pero kung ok naman ang yeast, puede mo ng iderecho. Lalo na sa mga first timer sa baking mas ok na ihalo sa warm liquid para siguradong madaling aalsa dough mo. Maganda din itong gawin lalo na sa malalamig na bansa. Any procedure will do as long as instant yeast gamit mo depende na lang sa temperature sa lugar mo o kung galing ref ang yeast mo.
Yung instructions ng overnight pandesal ay yung ube cheese pandesal overnight proofing. Puede din itong overnight pero adjust ka sa yeast. Check mo yung latest ube cheese pandesal video ko kung paaano gawin at ilan measurements ng yeast
check mo rin yung video ko na big pandesal, search mo lang sa channel ko. I use butter don at kelan ko nilalagay ang butter. Iba procedure pag butter gagamitin mo para ma maximize mo yung butterry flavor sa dough
Yes yudane pag hindi niluto, pero ang yudane ay pinagre rest pa ng 24 hrs, pinabilis ko lang po at pinag combine 2 procedure to make it easier and less time consuming. Thank you for your input.

Aasim po tinapay, madami ang yeast. Check mo yung ube cheese pandesal overnight proofing na video. Nandon po ang measurement ng yeast at procedure pag gusto mong 8hrs proofing.

Yes you may use half of the recipe. Better use a weighing scale for your flour and liquids para walang mali. I know you will be able to do it, just make sure to follow the procedures I have mentioned on the video. It is for beginners like you. Make sure also that your yeast is newly bought. Let me know if you have other questions, I want you to be able to make these successfully! You can do it!👍♥️

Mam,yun pong flour na ginamit for bread improver, lagi po bang sa mismong mixture ng bread natin babawasin,like sa 4 cups,so magiging 3 1/2 na lng sya dshil ang 1/2 for bread improver? At yung milk po,extra po not from the mixture like sa flour taken from 4 cups? Thanks po..

Hi Mai, I'm using measuring cups. I think it's how i put in the flour, iI think it's too compacted. So, will do the right way on my 3rd try. 🙂

Yes puede, kuha ka lang half cup flour at half cup milk from the ingredients ng ube cheese at yun ang gawin mo roux.

Hi Ms.Mai, as of the moment, my dough is proofing. The dough looks great and is elastic, however, I didn't use the fresh milk on the roux coz I didn't know what temperature exactly do I need to get the roux on the right consistency, So I tried using water instead, coz I did the milk roux twice.. at first it was hard to mix and the flour became lumpy, coz my milk is too hot. Second try, I did just warm milk but it's too runny.. so I tried doing it in water coz I'm wasting my fresh milk 😅 I didn't get the right consistency, but what I did is put it in the oven for ten seconds, stir.. another 10 seconds in the oven, then stirred it again.. until I got the right consistency (that you've shown in your video). If you can give the exact temperature for milk that would be helpful for me as I have my own milk thermometer. Hope my pandesal turns out well later.. Thank you so much! It happens to me as well, if the roux is too dry just add more hot milk. Don't throw it. If it is too runny add more flour. The result depends on the flour you use and it's measurements not the milk as long as the milk is hot and emitting steam that's fine, we are actually cooking the flour. hope you are using a weighing scale for all the ingredients to be exact. Another technique is to cook the roux in a pan over the stove in low heat. Just remember too runny add more flour, too thick add more milk.

Pag instant yeast puede ng derecho halo sa ibang ingredients basta may warm liquid kang gagamitin. I had trouble with my instant yeast before, hirap sya mag activate pag di ko nilagay.muna.sa warm liquid. Depende pala sa brand ng yeast so I opted to buy yung mas mahal ng konti na instant yeast at hindi na ko nahirapan magpa activate sa kanya kaya derecho na. Pag inihalo sa warm liquid makakasiguro kang mag activate ang yeast mo pero kung ok naman ang yeast, puede mo ng iderecho. Lalo na sa mga first timer sa baking mas ok na ihalo sa warm liquid para siguradong madaling aalsa dough mo. Maganda din itong gawin lalo na sa malalamig na bansa.
Any procedure will do as long as instant yeast gamit mo depende na lang sa temperature sa lugar mo o kung galing ref ang yeast mo.

Yung instructions ng overnight pandesal ay yung ube cheese pandesal overnight proofing. Puede din itong overnight pero adjust ka sa yeast. Check mo yung latest ube cheese pandesal video ko kung paaano gawin at ilan measurements ng yeast

Yudane po ata ang bread improver na gamit. Tanzhong pag niluto yung flour.
Yes yudane pag hindi niluto, pero ang yudane ay pinagre rest pa ng 24 hrs, pinabilis ko lang po at pinag combine 2 procedure to make it easier and less time consuming. Thank you for your input.

Mam ngtry na akong gumawa ng pandesal ok ba lang for 8 hours before cook ang 1 and one half table spoon ng yeast sa 500 grams na flour di po ba siya mapapanis salamat po
Aasim po tinapay, madami ang yeast. Check mo yung ube cheese pandesal overnight proofing na video. Nandon po ang measurement ng yeast at procedure pag gusto mong 8hrs proofing.
Hi - so the dry ingredients should just have 3.5 cups flour since we deducted 0.5 cups for the roux, is this correct? Or should it be a total of 4.5 cups flour (4.0 + 0.5 for the roux)? Thanks…

Yes you may use half of the recipe. Better use a weighing scale for your flour and liquids para walang mali. I know you will be able to do it, just make sure to follow the procedures I have mentioned on the video. It is for beginners like you. Make sure also that your yeast is newly bought. Let me know if you have other questions, I want you to be able to make these successfully! You can do it!👍♥️

Question your bread seems to be very soft and moist
Which flour makes the bread more soft and moist to last for days. is it bread flour or all purpose flour? Is there a difference of the out come of stay soft and moist for days?
I preferably use bread flour because of the higher gluten content that makes the bread stretchy. The roux will make it soft for days!

Mam,yun pong flour na ginamit for bread improver, lagi po bang sa mismong mixture ng bread natin babawasin,like sa 4 cups,so magiging 3 1/2 na lng sya dshil ang 1/2 for bread improver?

Yes correct sa flour, sa milk naman 1 cup talaga yan. Hinati lang, 1/2 cup sa roux at 1/2 cup sa mixture.
