Yes! Definitely using *cold* water in SmartWater bottles and I don't have any issues with the G7s or the VIA packs dissolving. We often will do 'cold' coffee if: 1. we are looking for a fast start to the morning and are not firing up a stove, 2. its a hot summer day and the temps are already pretty warm, or 3. we are making a mid-afternoon coffee. Just leave a little headroom in your water bottle so you can get good agitation when you shake! If we are making hot coffee, we tend to use a Starbucks' 1$ mug. One last point if you are making coffee (or any flavored drink) in your water bottle, you may need to hang your bottle if you are in bear country as it now has food smells associated with it.
