This looks divine! I make something similar but in a bundt pan. I always fail on my caramel! Please advise, my sugar always gets crystallized :(

Because the flan was more dense, it sank to the bottom while it cooked. I am surprised that it didn't mix.

Yes but you would have to take a smaller size tin as well.
If we don't get brown sugar so what we use instead of brown sugar.
Just use normal caster sugar

I don't think so - for the cake mix it would work, but the flan needs it for structure
