Honestly I think Windows 7 beats them all. It's clean and simple, highlights the big important logo but does it in a creative and interesting way. The old Windows 95, 98, me boot screens are interesting but a but too much for a boot screen imo, Windows Vista is just quite ugly, and Windows, 8, 10 & 11 are all too plain and soulless. Windows 7 is perfectly quirky but tasteful and satisfying to look at honestly.
Just one thing I noticed (though you probably don't have the required hardware to get this one): The Windows XP 64-Bit Edition, Version 2002/2003 (for Itanium-based systems) boot screen is missing. Great video otherwise.
@Martin Nobel If you'd like, I could send in a video of this one. I have the Itanium workstation so I could record all sorts of stuff with a screen capture device. Can do both XP and 2003 IA-64 captures and screenshots. Would happily answer anyone's questions on the arch. as well.

It's actually the boot screen when loading text mode during an upgrade :)

Media Center 2002 edition retained the Professional boot screen (tested it myself). Embedded is impossible to compile since the servers are down.
