    Hi, very informative video. Could you please explain what is the "consistency parameter"? Is it the % frozen water? Thanks for sharing

      Good morning and thank you! Consistency is the parameter our machines use to measure the creaminess and hardness of the gelato inside the machine.
      It’s a value that goes from 0 to 120 and it takes into consideration different parameters (the temperature of the mix, its viscosity, the temperature of the gas, etc..).
      The higher you set the consistency value, the harder will be your gelato when it comes out.
