    I followed your recipe and they were very good. I ate half of the batch, then ate other other half the following day. So good. I want to make more this Christmas, then of course watch my weight the rest of the week.

    The only recipe minimizing fillers: I don't recall my mother EVER using any, and I had the task of squeezing the water out. And she fried everything in Cisco- I am 76 so you can figure out this was the 50s. My mother was from the Hungarian speaking part of Romania, right on the, then, Czechoslovakian border.

      Beautiful. I grew up in the '60s. My mom was from an Italian- speaking Sicillian family. My Grandma didn't speak any English, but we understood everything she said. And Her cooking and baking was beyond anything ever created on Earth! My mom made these without squeezing, used salt and pepper and a little flour...simple and so comforting on a winter day. I miss my mom and grandma. I will make these today.

    We have them in Poland, but grate completely potato ... and add the same ingredients like egg, onion plus extra one to two spoon of flour, frying them in oil for crisp brown look ... to eat them with ketchup, milk, different sauces even meat curries, in the older days they eat them sprinkled with sugar. They are perfect winter dish ...

    I love black pepper in mine, and I salt them in the bowl . I use flour and baking powder . They puff up beautifully and turn out crispy on the outside and so soft on the inside . Perfect ever time .

      @@LittleKosherLunch I'll be honest, I tried. I just took too many short cuts, and that's on me. I used a spiralizer instead of graiter. But they tasted amazing! They were all gone within the 30 minutes.

    I tried this recipe for latke's and they were yummie! I know that a traditional accompaniment for latke's is applesauce. I had cranberry sauce on hand this weekend, so I tried a little "fusion cuisine" and paired the latke's with a little cranberry sauce, and they tasted really nice!

    Thank you for this wonderful recipe. This is the way I remember my Grandmothers and Mother making it. I liked your techniques also. (the cold water) and tangling your latke. I've seen recipes where they added almost a cup of flour. That would take away from the potato flavor. Your recipe was perfect. Thank you for sharing.

    Truly the best latke tutorial ever. So much nicer than lazy people and arrogant males making mush with their food processors and crushing the life and soul out of a special dish by strangling and constricting the potatoes in an old dish towel. Happy Hanukkah and Shalom.

      @@LittleKosherLunch Thank you! I used to use a mouli for my potatoes and onions, but now I just learned from you about hand grating the potato along its length. Should have been obvious, but it wasn't to me. Also your demonstration about twisting the shreds into a little heap and pressing between the palms, and using the starch as a binder - all completely new techniques for me.     I made latkes using this recipe for a NYE party last year and they were a big hit! Using the potato starch was such a great tip, as one friend had a corn starch allergy. I'm making them again tomorrow!

      Thank you! They truly are the most delicious. Don't get too caught up in tangling them. If you have long strands, they will naturally just hold together, especially after you press out the liquid just before frying. I'll have a video up soon on how I fry and freeze them, since a subscriber had questions on that. Have a wonderful holiday!

    Very good! I'm making them tonight. There's a unique place in Montreal. They make the Latkes then put them over a grill to finish them. This way the oil drips down and the Latkes have an extra flavor from the grilling. That place is called Main Restaurant on St-Laurent boulevard in case you go to Montreal one day.

      OMG, I lived in Montreal in 1980 while attending McGill University, and used to go to the Main! They had these amazing varenikas I’ve never had anywhere else! (Not sure about the spelling.) I knew when you said “unique place in Montreal” that it would be the Main! So glad to hear it’s still there!

      @@jakollee I used to go to Schwartz's to get a smoked meat sandwich (only, no fries) then crossed the street to get the Latkes. What a treat! There is also Slovenia with their famous sandwiches and coco Rico with the chicken and porc. That stretch on St-Laurent blvd has some very unique places!

    I made those, and boy was they good. Way better than McDonald hash browns. I don't even like McDonald hash browns. Those latkas got that good onion taste. Wow, I'll be making these often, and potatoes are really cheap. Putting Hardee's out of business woooweee!

    Melissa, two things:
    1. Where is the salt?
    2. Instead of adding the potatoes and then the egg to the bowl containing the potato starch, add just the egg (and the missing salt!) and then whisk together into a smooth mixture. THEN add the potatoes and toss to mix. Much more even and effort-free result.

    Those look amazing. I've never seen anyone save the potato starch. I always save it then usually dehydrate it to add to other foods as well. Last year I made sweet potato latkes and they were so good!

    I have never made these before and I have watched 3 videos on how it is done. Yours is the first not to use Matzo meal I find that interesting but I may use your recipe because I don’t have any of it on hand.

    My kitchen is egg-free because my hubby cannot digest eggs. This recipe, without the eggs, still works. I think the latkes are even crisper without eggs. I find freezing the shaped latke patties prior to frying them helps them hold their shape.

      Interesting! I think I have some sort of egg intolerance. I stopped eating eggs as a dish a few months ago. I still am able to use them in recipes (like meatloaf) though - without complications.

      @@LittleKosherLunch About 15 years ago I used to run a crockpot recipe newsletter for my job, as an editor and manager for one of the largest natural health sites at the time (this was back before even UA-cam and newsletters and blogs were the go-to for recipes as well as brand marketing). We had a lot of Jewish vegetarian subscribers and got a ton of really great recipes, so much so that I dedicated one of the three newsletter days of the week to Kosher recipes. One of my favorites was a vegetarian cholent that was a slow cooked stew of green, yellow, and red bell peppers and a medley of other stuff. I'll try to dig it up from my old printouts in my recipe drawer--it was excellent.

      Cleaning product question isn’t silly at all. Probably due to finally make a video over on Melissa Shares, but generally speaking I use very few products. In my cupboard I use dawn dish soap, bon ami or barkeepers friend dish powder, usually the free and clear Costco brand liquid detergent, borax, baking soda and a lemon, vinegar (diluted) for my floors, and on occasion some windex for windows (also do soap and water with a vinegar water rinse when we do big window cleaning projects). Hope that helps! Not totally “natural” but we keep it pretty simple. Very few products used in any given week. I have some funny things I do with laundry, so those I’ll save for a video one day soon I hope!

      So glad to hear it! Any flavorless oil will do. Vegetable or Canola oil is commonly used for frying latkes. My preference is grapeseed oil (Kirkland brand) - we use a ton of it in our house!

      I think you could totally pull this off, egg free! Once the latke hits your hot oil, make sure it sets and crisps nicely on one side, then turn over gently. It should hold. Enjoy!

    Could I use a salad spinner to dry out the potatoes?

      What an interesting idea? I have doubts that this would work as well. You definitely could give it a try, but I also worry that your potatoes would get very tangled in the grates of the basket? Ringing out in a dish towel is another way you can go - low tech and easy! The pressure is really what gets the liquid out.

      You can use coffee filters around the inside of the spinner part. I use mine but mine has really small openings and works great. It’s also easy to collect the starch in.

      It doesn’t make the cut for this recipe. The results are lighter and crispier latkes, just using the potatoes own starch.

      Hi Bruce, this really depends on how you size them. 3 potatoes would be enough for my family of 4 (2 children), possibly with a few leftover for rewarming w an egg at breakfast. Happy frying.

    You really had to make a comparison that the latkes reminded you to that of a “hairball” with the tangled potato ! Not to appetizing!
