TEXAS BRISKET FRANKLIN STYLE

  • I did this Brazillian brisket at 250F / 275F - 120c / 135c until it looked and felt right in regards to feeling rendered and jiggly but not dry on the external.
    Wrapped in butcher paper until it probed like butter, then it's done.
    Rested for 2hrs but can rest for longer!

    Hi, Just found your channel via Big Al’s BBQ & loving the content. What’s the idea behind the raised rack ? I use a Weber summit so would be interesting to know. Never done a brisket but you may just have given me the confidence to have a go. Cheers

      For me, it's to get the brisket a bit further away from the coals. I use the deflector but like to keep it a bit higher up. It seems to work 😉 the summit is my go to 😀

    This looked perfect! Is this is a Miguel Vergara brisket? Also, where did you get that upper grill? Looks perfect for the WSK

      This was the 1963 Brazilian brisket from John Davidsons. The upper grill is from @prosmokebbq it's the grillgrate for the pk grill but fits 👌

    What did you wrap it in? Its hard to find butchers paper in the uk.
