During my recent trip to Chiang Mai, Thailand, I met up with my friend Hanuman Aspler, who is one of the most knowledgeable people I know when it comes to Thai food history and science.
I’ve known Khun Hanuman for many years, originally in Bangkok. But a few years ago, he bought a plot of land in the mountains of Chiang Mai, Thailand, and started developing it. I had been following his progress and he had even explained to me about what he had to do - turning a swampland into liveable conditions, and building a traditional, yet clean with a few modern amenities, Thai home on the site.
Introducing - Three Trees Doi Saket! A project, their home, and now, a Thai immersive cooking class - easily the most in depth and authentic Thai cooking class, likely in the world. Hanuman is not only a cook, but he’s a walking encyclopedia of Thai history, the stories behind each Thai dish, and a scientist who known how to break down each dish and ingredients and tell you why it’s included and what it does for the dish. It’s always an honor to hang out with Hanuman, and cook and eat, because I come away with so much more knowledge.
Today we cooked Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว), what is one of the most popular Northern Thai food. It’s one of the dishes that if you ask someone from Northern Thailand what is a dish they crave or miss (if they are living in Bangkok), they would likely mention khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว).
Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) is a Northern Thai, yet Shan style, curry eaten with soft rice noodles. We gathered all the ingredients for the Thai curry paste, and pounded them all.
One of the most interesting lessons in this Thai cooking class today in Chiang Mai was about umami. Tomatoes are one of the few naturally filled fruits with umami. So he used a variety of different shapes, sizes, colors, and even fired some tomatoes to give the dish a dimension of umami. Other unique ingredients in khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) are cotton tree flowers (ดอกงิ้ว) and fermented soybeans (ถั่วเน่า tua now).
I’ve had plenty of bowls of northern Thai food khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) in Chiang Mai, but this was the most complex, richest, and most in depth flavorful bowl of the dish I’ve ever had. And the umami was maxxed out, the tomatoes blew my taste buds in all directions.
Huge thank you to Khun Hanuman and Khun Ton for their kindness and hospitality.

I love Hanuman's personality. So humble and loving
I love it when Joel is along. Everyone seems much happier and you all joke around. Does he help you out? A great friend to have. Love your videos.
ua-cam.com/video/IfoEqRVF4_s/v-deo.html
That is quite a long and intricate cooking process. You can tell Hanuman has a huge respect in the processes of cooking that dish. He's a flavor aficionado. Ain't no fast food there.
check out his Instagram, really a master of thai food.
Very nice video food looks great mark is the man!! Lose Joel he’s shirt tailing. And the man bun??? Distraction from mark and lovely family
You said it right. However, it will be bad if Mark decide to stay too long. He will eat all the hot peppers, tomatoes and lime that Hanuman has grown. :-) This is one of the best videos that Mark has done in a very long time. So Mark, thanks.
Having lived in Asia, having a friend like Joel to tag along where ever you go is actually a blessing. Two men, a woman and a child, that’s a safe traveling group. Further Joel is a lifelong friend of Mark, he followed him from high school/college in Tanzania to Thailand when Mark was a nobody. Such friendships are a blessings to have. So I think Joel provides the right companionship to Mark who is essentially a foreigner in Thailand.
Wow this video was incredible !!!
I am French and I was keeping on hearing since I am young than French food is the best in the world that our chefs were really creative etc. My dad is a chef too but... I don't say that French cuisine is not good I just say that French chef are so chauvin that they don't want to learn new stuff. They are not creative anymore, not looking for umami, too afraid to put their regular customers away so they stick with the tradtionnal dish.
I am vegetarian and I use a lot of spices in my food and always trying to take risks (cooking with tea, smoking etc) and this video really touched my soul ! Thank you for showing this to us ! I can't wait to plan some holidays in Thailand !! Thank you again
My favorite parts of this video was seeing how excited Hanuman got from sharing his food with you. Really goes to show how much love and appreciation he has for the ingredients and process. Great video and amazing shots!
I love that that chef loves what he’s doing. You can see the excitement in his eyes you can hear it in his voice. Even better when he taste of his own food he did the happy dance. I do the same thing when I cook something and I tasted it and it’s amazing I do the happy dance.
Outstanding to see someone like Hanuman be so passionate about Thai cuisine. He's very poetic and truly speaks from the heart.

Oh yes! And so nice and clean his cooking! Amazing
Ohh God what a tidy kitchen he has.He is a master in cooking. Not only given the attention for cooking but also to keep the premises clean and tidy.Hats off you sir.
What a beautiful place to build a house on, Thai people are so humble and friendly
Super Duo. Mark and Joel.... Just amazing
When I don't watch his videos regularly and I come back to watching them, I find I miss them. I love experiencing the foods of the world thru you Mark and ur little family 😊
Wow, this guy is the real deal. And what a beautiful home!
Any chef would be proud of his/ her creation after seeing Marks reaction to their food. Wonderful video Mark
Yes
Anny Nanny your purdy
You a clown you haven’t seen all his videos they all the same goof
@@youngbased5367 I believe it's all about a person's liking that's all
Anny Nanny I’m saying mark isn’t a a-hole so yea everybody who knows good for will smile like him
People said authentic Thai food are complicated. But this gentleman take it to another level.
Such a gift to be in Hanuman's kitchen and journey through the making of the dish. Mark you are so fortunate to have this experience. Blessing to you, Ying, Micah and Joel.
Totally agree with him… recipe just a guideline… method of ratio is what our mom always used as a home cooking' authentic and back to basic…
I think that this may be your best ever video! I love to see your friend Joel. That speaks to you Mark and how your bring friends and family into your videos. But this Chef blew my mind. Hanuman Aspler is inspiring. He deserves 5 Michelin Stars. Gordon Ramsay should beg him for advice and take a cooking class.
Everyone is so down putting of Joel when all he does is appreciate food just as much as Mark does. Marks wife is so busy with Micah that she can't help as much with giving input. A second opinion from someone who loves and adores food culture as much as Mark does, shouldn't be an issue. Joel, I love you in the video's. You should make a channel and if you have one please put it in the description box. Thank you.
dont worry the more Joel in mark's videos and ignoring all the hate, they will get used to it soon. LOL. Joel is great. He is just passionate about the flavours of foods
@Patricia Highton what's the name of his channel?

i love Thai food!! i love how every dish has its own unique history behind it. and the spicy part of it is crazy wow!!
when ying fed you the pepper
Wow a true Umani Master in such a lush, beautiful setting. So knowledgeable! What a treat. Interesting that Hanuman knew how much chili oil to add for Mark without overpowering all his hard work.
Hello there
Joel and Mark.....two guys who share the passion and joys of cooking and eating! Please continue the adventures and videos!!!!!
Mark I'm a fan of your videos and content. I also love Joel as an addition. I enjoy watching him and seeing his reaction to amazing food. I hope he can one day have a food channel. He's gorg

Anyone knows his channel?
I no like this Joel, his face like soo fake I wanting to slap it
@Nope Nope You're being rude for calling him an ignorant white kid? Maybe look at yourself before you start mouthing off at people.
Love Joel. Crush material! Love his "food love chuckle".

Joel and Mark! I love your videos together! You two compliment each other’s personalities so well!
wow...this maybe my favorite of all of Marks videos...the friendship and passion & food including the view. plus Hanuman is such a chill soul who I would love to watch cook and then eat with!!! amazing!!!! thank you!!!
I could not stop smiling while Hanuman was cooking and explaining Thai history. The complex flavor layering was just jaw dropping for me. Thank you Mark for the vlog it was truly entertaining and educational.
I have become hanuman's fan... He is really living a life...
Hello there
This guy is a genius when it comes to the art cooking, a master indeed 👍🏻👍🏻
Chef Hanuman thanks for the love for food and giving all its potential to another level, watching this video really gives me a lot of inspiration, its not always how expensive the ingredients are, but how it was cook with fashion. God Bless more also to you Mark
Joel don't ever stop being you you are so quirky and funny and respectful and awesome just like Mark, the two of you really elevate and play off each other well #TeamJoel
This really shows how flavorful and spicious Thai food is. I always used to think that cooking and serving Thai food in restaurant may be fast since they are mostly stir- fry in piping hot woks which accelerates the cooking process. But watching this whole process of preparing the base paste, it convinced me of the reason for Thai food’s complexity in flavor- which is the multiplication of ingredients used for the undertones.
In Thailand it maybe easier because there are many store that sell good quality paste,If you need some shortcut to cooking you can just buy paste.
I dont get it tho, why is everybody so rude to joel and picking up on him for doing his expressions... i dont see anything wrong with it, beside joel has passion for food too just like mike and another food vloger AND y'all that might have no youtube channel. Just stop being so rude, he's a human being... imagine if this happens to y'all and you read those hate comments, must be sucks. If you guys see a lot of mark previous vids long time ago you will see joel in some vids, i did and i liked him, so i did a lil research and found him... and HE IS amazing at reviewing foods
Edit : omg thank you so much for the likes!!!
because of his expressions--thats why,we get enough from mark.too much truthfully
Anthony M🤣🤣🤣
Because people are buttwipes who honestly don't have a life.
Yeah I admit Joel grew on me like a cute little mole😂😂😂
Coz he’s awkward as fck
Thank you Mark for nice episode.
It was quite amaze that he brought the food to another level with smoking Fish paste ,herbs, chilli and tomato.
This food is the everyday breakfast menu of eastern Shan people especially in Kengtung(เชียงตุง ).
In our Shan language we call it Khao Soi(ข้าวซอย), the noodle is quite thick and soup is more watery.
We do not use fish paste in our version :).
Such an experienced and knowledgeable chef, he is even elevated to philosophic level! Beautiful house.
One of my most favourite episodes. I looove Hanuman's place and his passion for food. Quite humble too
It’s amazing how your videos have only gotten better with time! Quality videos with quality content!
Wow the house looks like you can thoroughly relax and be stress free. Ahh so nice.
Ying is a wonderful mother from what I've seen..she's always so attentive! and little Micah turning the gas knobs in the background had me in splits...such a little tyke :D
I loved watching and listening to Hanuman (sorry for misspell). He loves, he's so passionate with the food. He gives a lovely smile, over and over. Such a lovely friend to have. 🍅🍄🍆🍇🍑🍒🍍🍅🍄🍆🍇🍑
I love seeing Joel in your videos Mark. I respect him as your friend. His excitement is infectious. I also follow his channel. He has such a beautiful soul.

Thanks for another awesome vlog! Hanuman is simply the best chef who has so much knowledge and respect to Thailand and its food & culture. I’d love to see more of how you’ve been raising your family in Thailand too. PS. I want to buy a piece of land next to hanuman now. 💗

I enjoy having Joel in your videos. I enjoy this non-Thai Chef cooking and appreciating the art of Thai cuisine. One of my favorite dishes in Chiang Mai and glad you spent a whole video on it.
What an experience it must be to cook with Haruman! So much to share and learn. You guys are so fortunate. Thanks to you Mark I've learned how to eat and appreciate the different kinds of chilli peppers I encounter in my love of spicy food from different countries and areas. Happy 2019 to us all!

Joel is a always great addition to your amazing videos Mark, Just wanted to take this opportunity and say thank you for uploading your videos in 4K although I can imagine it takes much longer time to upload than a 1080p and seeing many Bloggers are opting out of 4K uploads because of it but they don’t understand how much of a difference it makes. Wish you and family all the success in the new year and I can’t wait for your 10M subs very soon
i adore mika and i love watching him his just a cute little baby
This must have so much explosions of flavor! I mean, look at all those spices!
I love it when you speak Thai. It's like speaking kitty or something. Super cute XD

Great video, Mark! Hanuman is a master with a passion for cooking - much respect! He's absolutely correct about MSG, there is actually nothing wrong with using it in cooking - I've been cooking with it for years.
What an amazing chef Hanuman is!! And we all love Joel, it's easy to see he is a great guy, just like Mark. And of course we all love Ying and Micah, too!!
He should start a UA-cam channel
