    During my recent trip to Chiang Mai, Thailand, I met up with my friend Hanuman Aspler, who is one of the most knowledgeable people I know when it comes to Thai food history and science.
    I’ve known Khun Hanuman for many years, originally in Bangkok. But a few years ago, he bought a plot of land in the mountains of Chiang Mai, Thailand, and started developing it. I had been following his progress and he had even explained to me about what he had to do - turning a swampland into liveable conditions, and building a traditional, yet clean with a few modern amenities, Thai home on the site.
    Introducing - Three Trees Doi Saket! A project, their home, and now, a Thai immersive cooking class - easily the most in depth and authentic Thai cooking class, likely in the world. Hanuman is not only a cook, but he’s a walking encyclopedia of Thai history, the stories behind each Thai dish, and a scientist who known how to break down each dish and ingredients and tell you why it’s included and what it does for the dish. It’s always an honor to hang out with Hanuman, and cook and eat, because I come away with so much more knowledge.
    Today we cooked Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว), what is one of the most popular Northern Thai food. It’s one of the dishes that if you ask someone from Northern Thailand what is a dish they crave or miss (if they are living in Bangkok), they would likely mention khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว).
    Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) is a Northern Thai, yet Shan style, curry eaten with soft rice noodles. We gathered all the ingredients for the Thai curry paste, and pounded them all.
    One of the most interesting lessons in this Thai cooking class today in Chiang Mai was about umami. Tomatoes are one of the few naturally filled fruits with umami. So he used a variety of different shapes, sizes, colors, and even fired some tomatoes to give the dish a dimension of umami. Other unique ingredients in khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) are cotton tree flowers (ดอกงิ้ว) and fermented soybeans (ถั่วเน่า tua now).
    I’ve had plenty of bowls of northern Thai food khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) in Chiang Mai, but this was the most complex, richest, and most in depth flavorful bowl of the dish I’ve ever had. And the umami was maxxed out, the tomatoes blew my taste buds in all directions.

    Everyone is so down putting of Joel when all he does is appreciate food just as much as Mark does. Marks wife is so busy with Micah that she can't help as much with giving input. A second opinion from someone who loves and adores food culture as much as Mark does, shouldn't be an issue. Joel, I love you in the video's.       It is incredible how, although we live very close to these customs, we have no idea how we can prepare it or the cultural importance it may have. I found some recipes and reviews of Mexican food, I'm from Mexico, and I had no idea what the process was for things I eat on a daily basis.

    It seems that Joel is fitting in nicely, he actually seems actually more of a true "foodie," he is interested in ingredients, pays attention and is respectful in taking a back set to the host and guests. It seems that Marks likes to eat (and drown his food in hot sauce-which ruins the true flavors, LOL) whereas Joel seems as if he would enjoy cooking. About this video...it honestly seemed as if the food was just okay.

      There is a place for science in cooking but cooking is definately not science. It is an art form that is mastered through practice. Beautiful place, but as food goes I would have to say stick to the local favorites in markets and night markets. Only thing is, they won't show you how its done.

    I am a TeoChew and Hanuman uses many TeoChew words like sik you and toa chu, of which I am familiar. Thai food like Malaysian food is such an excellent and easy to cook food and very enjoyable to eat.

      Monosodium glutamate (MSG) is the sodium salt of the common amino acid glutamic acid. Glutamic acid is naturally present in our bodies, and in many foods and food additives.
      How is it made?
      MSG occurs naturally in many foods, such as tomatoes and cheeses. People around the world have eaten glutamate-rich foods throughout history. For example, a historical dish in the Asian community is a glutamate-rich seaweed broth. In 1908, a Japanese professor named Kikunae Ikeda was able to extract glutamate from this broth and determined that glutamate provided the savory taste to the soup. Professor Ikeda then filed a patent to produce MSG and commercial production started the following year.

    Hello Mark, I really like your videos, You should go to Piñones P.R. and to the west side of the Island of P.R. if you go cause you like hot spicy food, ask for picante hecho en la casa is from those very hot lil chiles in P.R.     That is quite a long and intricate cooking process. You can tell Hanuman has a huge respect in the processes of cooking that dish. He's a flavor aficionado. Ain't no fast food there.

      Having lived in Asia, having a friend like Joel to tag along where ever you go is actually a blessing. Two men, a woman and a child, that’s a safe traveling group. Further Joel is a lifelong friend of Mark, he followed him from high school/college in Tanzania to Thailand when Mark was a nobody. Such friendships are a blessings to have. So I think Joel provides the right companionship to Mark who is essentially a foreigner in Thailand.

    Wow this video was incredible !!!
    I am French and I was keeping on hearing since I am young than French food is the best in the world that our chefs were really creative etc. My dad is a chef too but... I don't say that French cuisine is not good I just say that French chef are so chauvin that they don't want to learn new stuff. They are not creative anymore, not looking for umami, too afraid to put their regular customers away so they stick with the tradtionnal dish.
    I am vegetarian and I use a lot of spices in my food and always trying to take risks (cooking with tea, smoking etc) and this video really touched my soul ! Thank you for showing this to us ! I can't wait to plan some holidays in Thailand !! Thank you again

    I love that that chef loves what he’s doing. You can see the excitement in his eyes you can hear it in his voice. Even better when he taste of his own food he did the happy dance. I do the same thing when I cook something and I tasted it and it’s amazing I do the happy dance.

      He live in Thailand for so long. 1989 is like 30 year.I think you can easily find good chef that is age around 30 year old.

    My favorite parts of this video was seeing how excited Hanuman got from sharing his food with you. Really goes to show how much love and appreciation he has for the ingredients and process. Great video and amazing shots!

    I dont get it tho, why is everybody so rude to joel and picking up on him for doing his expressions... i dont see anything wrong with it, beside joel has passion for food too just like mike and another food vloger AND y'all that might have no youtube channel. Just stop being so rude, he's a human being... imagine if this happens to y'all and you read those hate comments, must be sucks. If you guys see a lot of mark previous vids long time ago you will see joel in some vids, i did and i liked him, so i did a lil research and found him... and HE IS amazing at reviewing foods
