I've always thought SOS was made with chipped beef. My grandparents made it all the time and called it chipped beef and gravy. Where I live we just call it sausage gravy. The name is not important anyway. I would never turn down either if they were offered to me no matter what they call it.
My man you are excellent at making most anything but I took it personal that you ruined my most favorite dish in the whole wide world by adding salsa to it. Edit: also imo it tastes far better with beef chips but they are so expensive to buy for such little you get but well worth it. That's how my mama used to make it.
