I would add more time so the freeze dryer does not stop when I am asleep or gone. Letting it sit like that with ice surrounding your drum would rehydrate your food wouldn’t it?
On this freeze dryer the setting to use is unfrozen, the other choice is unfrozen and I wouldn’t put ice cream in when the chamber is still warm. 😀 And no I did not have to add more time, they were very much done at the end of the original cycle.
I looked up the laws in my State (Arkansas) because I wanted to sell freeze dried eggs. The answer was a resounding "NO." The reason was: The freeze dryer doesn't kill bacteria such as salmonella. BUT anything else that is a non-TCS food is allowed (“time/temperature control for safety food products”) I called my local health department since the laws changed here in 2021 and they didn't know and had to ask someone higher up. I got the call back with the answer and explanation. Pity, since I have SO MANY darn eggs already freeze dried to keep them from going bad (no joke, over 100 dozen.) I gave up and started hatching them instead. Now I can sell chicks at $3 each instead of begging people to buy a dozen eggs for $1 with no takers since everyone around me has chickens or knows someone who does. LOL
Would be a good idea to use sterile gloves while handling food others will eat, and maybe not sampling food with the hands you are packing the same food with 😁😉

Just an fyi… you cannot sell ice cream u see cottage foods licenses. Only through a usda licensed facility.
Admittedly I do not know the details of that. Perhaps those I see selling it have figured it out. 🤷♂️
