      Aww love to hear you watch with your Mom :) Just leave the butter out for 30 mins and it will soften, or set in micro on defrost for a few secs :)

    Scientific Tip: (I know you mentioned this partially in the video) When you are baking with yeast, the yeast is actually doing anaerobic respiration(fermentation), which produces Carbon Dioxide. The Carbon Dioxide is what is seen in the product when it has riden. One of the reactants for fermentation is C6H12O6, which is sugar. The sugar is used to "feed" the yeast. Then, after you see the yeast rise, it produces the gas CO2, water, and alcohol. (Sorry for the irrelevancy)

    Oh Beth, the things you do to me!!!! It took me back to my childhood in Romania :-))again! and I just came back from New Orleans and guess what? I was a bit lazy so i bought the premix from Cafe Du Monde :-))) but I do love making them from scratch :-))) YUM!

    Beth... I'm 14 and i'm albanian.. I love your recipes! I just wanted to tell you that i know a recipe that is super easy and two times faster to do.. You don't have to wait for the dough to rise! The recipe calls for baking powder and a little bit of baking soda instead of yeast. And buttermilk or yogurt instead of milk. I think the acidity of the buttermilk combined with that little bit of baking soda helps the dough rise WHEN it's frying, you don't have to wait 2 HOURS. Just make the dough, let it sit for 20 min, cut it, and fry. I can give you the full recipe if you'd like!

    when i was in new orleans we went to cafe do monde, everyday. when we left I had eaten a total of 21 beignets

    We live about an hour and a half away from New Orleans, so my husband & I go there at least once every year & ALWAYS have beignets at Cafe du Monde. We usually just buy the mix at the cafe to make them at home, but I can't wait to give these a try! Yum!

Grew up there from age 3-18 and then moved to California. I loved growing up there, the seasons, the people, it was such a nice small town environment. But now as an adult I don't miss those winters ha! Well, maybe for 24 hours on Christmas day :) Where are you from in CT? Do you still live there? Hope you have a wonderful holiday season!!

      Entertaining With Beth I am a born and raised CT girl from the southeastern part of Connecticut (New London/Waterford) and I’ve lived here all my life. I love experiencing all four seasons so much, winter is my least favorite though. As long as I’m not trapped in the house because of snow, it is a-ok with me. So far the holiday season is going great, I just love this time of year so much since I get to be with friends, my family and my boyfriend’s family! Hope you’re having a great holiday season as well!

    If you go to New Orleans close to where I live you can actually see at Cafe Du Mon you can watch them make them and they throw the dough behind there back into a hugh frying pot it's great!!

    Dear Beth, thank you for your recipe and video, the beignets look really nice.A question I have: at the Cafe Du Monde the dough is not let to rise. As soon as it comes out of the mixing machine it is rolled out and fried.Would this work with the recipe you suggest?Thanks

    it's nice, in Indonesia, we call it as "Bolang Baling", but the different is we put some sesame seeds in the top of the dough before it's fried.. :)

    I just made this yesterday and I'm working on a cake order and I checked on the bread to rise 2 hours later but it didn't rise at all so I moved it to my table and now it's 5am and it actually rose up!! Do you have an idea Why did it took so long to rise? I'm happy but mind blown at the same time!

      Hmm it could be that your table was a warmer spot? If it's to drafty or chilly it won't rise :( It likes warmth :)

    Hey Beth! I can't wait to try this recipe out. If my batch turns out just as great as yours I might just make this for Easter. I do have a recipe request though. Leche Flan! The trouble that I am having with this recipe is the sugar always begins to crystallize. Can you work your magic and please come up with another FOOLPROOF HOW TO for this? It's a very popular dish here on my island of Guam and would really love to impress the family with this.

    Okay, another newbie cook question: I see lots of cooks go ahead and use their kitchen aid mixer with the dough hook for some doughs, and other doughs they do by hand. How do I know what kind of dough should really be done by hand instead of in the mixer?
    I can THIS recipe be done with the mixer/dough hook and still come out right?

      Great question! Yes you do see that a lot dough hook vs by hand. Yes a dough hook will always make a finer, more evenly mixed dough. But I always try to develop recipes that use the least amount of gadgets and equipment. So they can be done by those who may not have the equipment. So if can be made without the gadget that's usually the route I take. Plus I hate doing dishes LOL! So anything that avoids having to wash out extra things I'm all for :) But yes you could use your dough hook if you'd like but it's not necessary :)

    I have found that if I just let my tumble dryer run until it's a teeny bit warm that's the best place to let dough rise. But one has to be careful not to make it too warm or it'll all turn out a mess.

    Hey Beth! I love your videos and am always excited for a new upload~
    Is there any advice you can give me for a fairly quick on-the-go breakfast I can eat in my car?
    My mornings are usually pretty tight and I hate having to choose between a quick breakfast cereal or quickly prepared toast with 2 slices of bacon (the usual).
    Any advice is much appreciated~

    Looks yummy ^^ I can't eat fried things so I can only imagine how good these are.
    I put my dough into the microvawe (turned off of course xD) - we always have so much stuff going on in the kitchen (and in the oven) that I can't find another safe place for my dough :)

    The dough is rising right now!
    A little problem that others might come across with this though - the water temperature dropped significantly when I added the sugar, from 110 degress to 86! so I had to start all over. I heated the water, added the yeast and let it bloom, then whisked in the sugar. It worked well:)

    Where I live I can't get evaporated milk so what can I use instead of it ?

      Ah yes. Great question! OK so if you live in the states it can be found in the baking aisle in a little can. It's not the same thing as "Sweetened condensed milk" don't use that. It has too much sugar in it. But if you can't find it then yes, you can use an alternative. I have found that heavy cream (double pouring cream) or half and half (half cream half whole milk) works the best. Regular milk doesn't work as well. Hope that helps! :)

    my mom always put the yeast in the freezer and it lasts forever .. i don't know if this is ok to all yeasts or what but we used the same brand for a very long time and it really enjoys living there xD

      Ah yes excellent question! OK here's what I do. I allow it to cool completely and then when it's safe enough to handle I place the pot, with the cover on, in the fridge overnight. In the morning it will have turned into a solid and can be stored in a smaller container in the fridge for future use (if it is not too dirty) or if it is discard in the trash.

    Nice recipe! Now, if you want to eat these like a true Southerner, you will also want to pile that powdered sugar high on top of those Beignets - think a little mountain of powdered sugar "snow" and you'll be good! ;)
    And for those of you who (like me) tend to think of Beignets as a bit too dry for your taste...try the best kept secret of us New Orleanians down here...dip those babies in the Cafe au Lait!

    Curious some recipes I have seen for beignets use this type of dough, others use a pate a choux dough. Is it regional, or quick vs regular. Why the variation?
