    Great recipe! I followed all the steps but I fried the catfish first and added it later (I also subbed Kaffir lime leaves for lime and lemon zest) Came out delicious better than any reasturant!!

      Yes, she love making keang phed gai with pumpkin and tons of basil, or her Stir-fried thai eggplants, long beans and basil in red curry then pour over fried tilapia. 😢 😢

    why you put Eggplan in the salted water?

      To prevent the cut sides of the eggplant from turning brown

      Slice an eggplant and leave it out for 10 minutes then see what happens to it.
