- **** Kielbasa & Sauerkraut ****
2 Tbsp Butter
1 Medium Onion - sliced
3 Cloves Garlic - minced
2 lbs Kielbasa - sliced
2 lbs Sauerkraut - drain most of the liquid not all
Black Pepper to taste
In a large skillet over medium heat melt butter, add onions stirring 3 - 4 minutes add garlic stirring for
an additional minute or two. Add sliced kielbasa stirring for a few minutes, add the sauerkraut and season with pepper. Cover and simmer for 15 - 20 minutes until everything is heated through.
**** Honey Barbeque Meatloaf ****
2 lbs Ground Beef
2 Eggs
1 C Oats
1 Medium Onion - chopped
1/4 C Brown Sugar
2 Tbsp Worcestershire Sauce
2 Tbsp Yellow Mustard
2 tsp Garlic Powder
2 tsp Chili Powder
1 tsp Salt
1/2 tsp Pepper
1/3 C Honey
3/4 C BBQ Sauce
Ketchup
Mix ingredients in a large bowl. Place meat mixture in a baking dish sprayed with non stick spray.
Shape your meat.
Bake @ 350 F for 1 hour. Remove from oven and top with ketchup. Return to oven and bake for
an additional 10 - 15 minutes. Remove from oven and let rest for 10 minutes before
cutting into.
**** Sausage Bean & Pasta Stew ****
2 lbs Italian Sausage - hot or sweet or use a combination of both
2 Tbsp Olive Oil
1 Large Onion - diced
4 Carrots - diced
4 Cloves Garlic - minced
1 Tbsp Tomato Paste
1 Tbsp Balsamic Vinegar
2 tsp Italian Seasoning
1 tsp Smoked Paprika
1 14oz Can Fire Roasted Tomatoes
1 15oz Can White Beans - drained & rinsed
1 C String Beans
6 C Chicken Stock or broth
2 Tbsp Fresh Parsley - chopped
Salt & Pepper to taste
1 C Ditalini Pasta
To par boil sausages:
Add sausage links to a large skillet and fill halfway up with water. Cook sausage on medium to low heat poking the skin to release the fat. Par boil for 5 - 6 minutes on each side. Remove from pan and slice sausages.
Heat oil in a large stock pot or dutch oven, add onions cooking 2 - 3 minutes, add carrots cooking and additional 2 - 3 minutes. Add garlic stirring until combined. Add italian seasoning & smoked
paprika, salt & pepper. Mix well. Stir in balsamic vinegar and tomato paste. Stir until all combined Add fire roasted tomatoes, white beans & string beans. Mix well. Add in sausages and pour in chicken stock. Add fresh parsley. Cover.
Simmer on low heat for 1 1/2 - 2 hours or until vegetables are cooked through. Add in pasta and
simmer for an additional 20 minutes or until pasta is al dente.
