Making Gluten-Free Boo Cups with Siobhan Muir

  • Need a quick and fun Halloween treat that everyone will love? I guarantee this isn't just for kids. The adults who tasted these LOVED them. Makes a great treat for parties and holiday gatherings.
    Ingredients
    3 1/4 cups cold milk (we used goat milk)
    2 packages (4 serving size each) JELL-O Chocolate Instant Pudding
    1 cup whipping cream, whipped stiff
    20 Gluten-Free Oreo Chocolate Sandwich Cookies, crushed and divided
    30 mini semi-sweet chocolate chips
    15 small 5 oz plastic cups
    Directions
    Pour milk into a large bowl and add the pudding mixes. With a hand mixer, beat on medium for around two minutes.
    Gently stir in 1/2 cup of whipped cream and half the crushed gluten free Oreo cookies.
    Spoon 1 Tbsp of the remaining crushed cookies into each of the 15 plastic cups. Spoon putting mixture evenly into the cups, flatten, and top with remaining crushed cookies.
    Drop a dollop of whipped cream on top to create the "ghosties". Decorate with two chocolate chips each as eyes.
    Refrigerate until ready to serve. Store leftover dessert in the fridge.
    Makes 15 5 oz cups of pudding dessert.
