I always make 1 pumpkin pie and 1 pecan pie. I use half corn syrup and half maple syrup for my pecan pie. That way it isn’t overly sweet. I also like to add some whiskey and cinnamon to the pecan pie filling. 2 pies are more than enough since there are only 4 of us together for Thanksgiving.

My mom used to cook those pie crust scraps and dust them with cinnamon and sugar and feed them to me so I would leave the pie alone for a minute!
OH MY OH MY! This recipe is awesome, I have always struggled with making pie crust. I have tried the food processor before but put the water in the processor and it never worked out for me. But this technique of dumping the flour and butter mixture into a bowl and adding the water worked perfectly. Thanks so much for sharing and making my life easier.. I love love love pie but have always dreaded making the crust. Thank you. I enjoy your sense of humor and your passion for all things pie.

Okay, I made this exactly as directed, and it came out great. It was a dream to roll out after chilling for a little over an hour. I do not par bake my pumpkin pie shells. After rolling and shaping I chill it in the freezer while I throw together my filling. I pour the filling into the raw crust and bake at 400 degrees F. Maybe it’s my pan (heavy steel) that gives me a perfectly cooked crust top to bottom. Also I place the pie pan onto a shiny aluminum sheet pan while baking. My crust was toasty brown on the bottom. Gorgeous!
Erin after watching and rewatching your pie videos I decided to tackle making an all butter pie crust for the first time last night. It came out fantastic for a first timer like me. Your directions and videos where so helpful. I'm feeling confident in my plan to tackle making a pie for Thanksgiving this year. You are an amazing teacher.

Hi! I just started watching your videos this week and I’m glad I did. I’m the family baker. My mom taught me to make pie dough when I was a teenager because she didn’t want to do it anymore. I used the recipe she taught me for years, until I was working full time and didn’t have the time to make the crust myself. I used the Pillsbury crusts during that time but not that I’m retired, I wanted to go back to making the crust myself. I didn’t anticipate having so much trouble remembering how to do that. I keep trying different recipes so when I saw this recipe, I thought this is easy. I should be able to do this. I made the crusts and put them in the refrigerator this morning and I’ll make the fillings later today. I wanted to try one to see how the crust tasted so I made some air fryer hand apple pies to test it out. Oh my gosh, this crust is delicious! I’m so excited. The apple and pumpkin pies for tomorrow will be perfect. Thank you, thank you, thank you!! P.S., My mom’s crust is made with flour, salt, water and shortening (she was a depression child, after all). But this butter crust is so good. Sorry, Mom!

Adding the ice water by hand is the key. You really get a sense of how the dough is hydrating. I always added it to the food processor and it didn't incorporate evenly. Thanks for the tip! Any opinion on substituting some of the water with vodka?
I've just bought a food processor, so I'm going to try it out on this. I've always done my pate brisee by hand via Julia child, including the squishing of the dough on the countertop at the end (liaison? something french?). You know what i mean. This seems like a good test for the new machine.

I wish I could afford your pie beans, but I did have a question I hope you wouldn’t mind answering: what kind of attachment did you use for the food processor? I received a fancy one last holiday that has an actual dough attachment, but it looks like you used the regular chopping one. Which would you recommend?
My garage sale food processor only has one blade attachment, and since I’m mostly using it to incorporate the cold butter, that attachment works great! I’m sure the dough attachment would work well, too! ❤

So I got all geared up and made PIE! I made the All Buttah Crust Apple Pie; cooked filling tastes great, 6 pounds of yummy Honeycrisps, I have never hand-rubbed the butter in before, but it worked well! The pie looked beautiful going into the oven, but it lost all definition in the oven, can barely see my beautiful crimping job… think it’s gonna taste great though! Happy Thanksgiving!

I need your opinion of what I did wrong. I made your crust, par baked it and it was beautiful. I wrapped and froze it for 1 week, defrosted in the fridge and the night before Thanksgiving, I filled it with pumpkin pie filling. I baked it and it was looking great. I cooled it, wrapped it and put it in the fridge overnight. The crust was soggy and not flaky at all. It looked nicely brown all over, but lost it's beautiful texture. What did I do wrong? Also, the crimped edge of the crust was sort of hard, while the rest of it was soggy, I thought from being in the fridge. 😧
I have PYREX and pyrex pie dishes because that’s what my mom used, but I’m always a little nervous when I take them directly from the refrigerator or freezer to a hot oven. I’ve noticed you use metal pie pans. Is that your preferred vessel? Also, you must include your pie bean infomercial into all of your videos… it’s hilarious. Never gets old. 😂. I’m so excited to get my pie beans. It’s the only thing I want for Christmas…two sets, because when I pie, one is never enough 😎
I used to love glass for the same reason, and even recommended them - but after many years of pie baking, I sorta changed my tune. While glass still can work, I find there’s a whole host of pie problems that seem to happen more frequently in glass (butter melting out, pale/soggy bottoms, sticking to the pan). Metal is my favorite + the most nonstick. Ceramic is my second favorite, and I still use ceramic pans a lot! I also like using cast iron or forged iron pie plates, which really retain the heat well! ❤
The holes truly become filled in during the process of par or blind baking so this isn’t usually an issue. If you find a crack or hole that’s too large and is scaring you, you can patch it with melted chocolate or egg wash to fill it in before adding your filling! ❤
Okay, so I have a pie crisis. Every Thanksgiving and Christmas I throw huge amounts of pie away. You see, I have a family of 4 and we like different pies. My hubby like pecan, my daughter French Silk and my son and I pumpkin. My son and I are the only ones who like pumpkin, but everyone likes the Fr. Silk and Pecan so making individual pies isn't quite enough. How can I bake a half a pie? I did see a divided pan on Amazon, but, of course, none of the pies have the same baking times. I did find a 7 inch pie pan on Amazon. Is that about a half a pie size? Any and all advice is appreciated.
6 inch pie pans are probably more accurately half size! Try to focus on the visual cues in the recipe (usually appearing right before or after bake times) - these can be good guidelines for doneness to help you determine the adjusted bake time! ❤ I'd also like to recommend pie milkshakes with the leftovers - you literally blend a slice of pie with ice cream and it's delicious! It's a great way to use up leftover pies when you do have them (or when they get to be more than a couple days old and the texture starts to suffer)!

My garage sale food processor only has one blade attachment, and since I’m mostly using it to incorporate the cold butter, that attachment works great! I’m sure the dough attachment would work well, too! ❤

So I got all geared up and made PIE! I made the All Buttah Crust Apple Pie; cooked filling tastes great, 6 pounds of yummy Honeycrisps, I have never hand-rubbed the butter in before, but it worked well! The pie looked beautiful going into the oven, but it lost all definition in the oven, can barely see my beautiful crimping job… think it’s gonna taste great though! Happy Thanksgiving!

Any advice for why crust tears when I transfer it to pan? I generally use parchment or rolling pin to move it... maybe its getting too warm???

I need your opinion of what I did wrong. I made your crust, par baked it and it was beautiful. I wrapped and froze it for 1 week, defrosted in the fridge and the night before Thanksgiving, I filled it with pumpkin pie filling. I baked it and it was looking great. I cooled it, wrapped it and put it in the fridge overnight. The crust was soggy and not flaky at all. It looked nicely brown all over, but lost it's beautiful texture. What did I do wrong? Also, the crimped edge of the crust was sort of hard, while the rest of it was soggy, I thought from being in the fridge. 😧

I have PYREX and pyrex pie dishes because that’s what my mom used, but I’m always a little nervous when I take them directly from the refrigerator or freezer to a hot oven. I’ve noticed you use metal pie pans. Is that your preferred vessel? Also, you must include your pie bean infomercial into all of your videos… it’s hilarious. Never gets old. 😂. I’m so excited to get my pie beans. It’s the only thing I want for Christmas…two sets, because when I pie, one is never enough 😎
I used to love glass for the same reason, and even recommended them - but after many years of pie baking, I sorta changed my tune. While glass still can work, I find there’s a whole host of pie problems that seem to happen more frequently in glass (butter melting out, pale/soggy bottoms, sticking to the pan). Metal is my favorite + the most nonstick. Ceramic is my second favorite, and I still use ceramic pans a lot! I also like using cast iron or forged iron pie plates, which really retain the heat well! ❤

How do you keep a liquid pie filling from leaking through the holes you poke in the par-baked crust?
The holes truly become filled in during the process of par or blind baking so this isn’t usually an issue. If you find a crack or hole that’s too large and is scaring you, you can patch it with melted chocolate or egg wash to fill it in before adding your filling! ❤

Okay, so I have a pie crisis. Every Thanksgiving and Christmas I throw huge amounts of pie away. You see, I have a family of 4 and we like different pies. My hubby like pecan, my daughter French Silk and my son and I pumpkin. My son and I are the only ones who like pumpkin, but everyone likes the Fr. Silk and Pecan so making individual pies isn't quite enough. How can I bake a half a pie? I did see a divided pan on Amazon, but, of course, none of the pies have the same baking times. I did find a 7 inch pie pan on Amazon. Is that about a half a pie size? Any and all advice is appreciated.
6 inch pie pans are probably more accurately half size! Try to focus on the visual cues in the recipe (usually appearing right before or after bake times) - these can be good guidelines for doneness to help you determine the adjusted bake time! ❤ I'd also like to recommend pie milkshakes with the leftovers - you literally blend a slice of pie with ice cream and it's delicious! It's a great way to use up leftover pies when you do have them (or when they get to be more than a couple days old and the texture starts to suffer)!
