    I heard from some sources that if you use salt in processor, you have to clean processor imeemdiately to prevent rusting so I never use salt in processor but it is really up to you.

    you could also freeze it in ice trays. I believe the standard ice tray cup holds two tablespoons. once frozen you can transfer them to a Ziploc bags for easier storage and quick use (already measured)

    I add a little bit of olive oil to ground ginger or garlic and pulse in the mixer for couple of seconds . It emulsify the paste . This way the paste lasts longer and maintains its colour.

    It is normal to get garlic green but not poisonus. You can add little bit warm oil and vinegar to prevent discoloring.

    I make these pastes and usually keep them in jars because they lock in odors that I don't want in my fridge or freezer but I'm not opposed to plastic. Just a hint to anyone viewing: these sealable plastic containers can be found in Chinatowns or Japanese and other Asian stores. They aren't expensive at all and come in so many varieties of sizes and colors. Hope this helps anyone looking for them. Love your recipes Bhavna, especially the vegan hot dog one. They came out crazy looking but the taste was amazing. Thanks for posting your wonderful recipes and adventures. I've been inspired. I now have 2 kari trees and all the leaves I want for biriyanis, pickles etc. The little plant I bought was $30.00! Unbelievably expensive but after 5 years and pruning, they dropped wet seeds an propagated two more full, thick bushes. All because I saw your garden of methi, chilis etc! so thank you for that!

    Hi Bhavna! Thanks for the video!
    I usualy throw my garlic paste at the beginning of dishes with onions and it often burns.
    When I put it by itself it usualy ends up undercooked.
    Any advice on how to use it properly?

    I think it's great that you recycle the yogurt containers. Why waste your money to buy special freezer containers when these work fine. You are a smart woman. Thank you for sharing. I love your recipes!

    hi bhavna, thank u very much for this video, very useful. but i have few questions. why don't u add salt while grinding the ginger/garlic directly in the processor? can i use the food processor for making idly/dosa batter and chutney and indian masala paste adding water?????? plz suggest......what is the size of ur food processor?

    Hi bhavana I made these all paste but I don't have food processor so i prepared these paste in regular mixer n they require water. so thenafter,my all paste will remain good within 2 month in freezer? If we put in refrigerator then?

    One question: is there a special reason why you add the salt after you get the pastes from the food processor? Could I not process the pastes with salt together, to ensure well mixing?

    Bhavna I love your recipes! I am not indian, but my husband is. I always use your recipes for cooking subzis and my rotis are almost as round as yours...I am getting there with the help of your videos... I commented before but i think my message never posted. I would like to know how you plant your vegetables and take care of them. I am trying to grow chillies and coriander on my window but we live in NY and weather isn't good here.do you think it's possible to grow indian produce in NY? i

    Hey again Bhavana,
    I have a quick question. When I make chilli paste no matter what I add to it, be it vinegar or oil, it starts turning darker after a couple of days and smells weird. Any useful tip? I tried freezing as well, didnt work much..

    Bhavna what are the ingredients for home made garam masala which has good flavour. I find them to be dark brown in shows. But the ones i make at home are bit light in colour. Suggest !

    Ginger can be bought in bulk and then it could be preserved year long in the soil. At my home, we buy 5kg of ginger in winter when it is in a season (cheap and best quality) and then in one pot we do alternate layers of ginger and soil. You could try this method for a small batch.

    How long can you keep each paste separately in the fridge only not freezer before it goes bad? I added some salt and olive oil to mine but the ginger paste and green chilies paste starts showing mold after about 2 weeks. Is there a way to preserve longer in the fridge? Thanks!

    Thank you for this fabulous video. I tried to make ginger/garlic paste and when I put it into a jar - it began expanding the next few days and made a mess in my refrigerator. Was this because I combined the two? Many thanks!

      Bhavna's Kitchen Hi! I used just salt & oil. Maybe I didn't use enough salt? But I lost about 1/4 of it because it bubbled up and popped out the cap on the jar. Not sure what I did wrong - but I will try it YOUR way :) Thanks!

      +Abena'sKitchen if you add ginger garlic during tadka, or if sauté good in oil, it won't be bitter.

      Garlic will get bitter if you cook it too long or get it too hot.

    Hi Bhavana,
    When to add oil to these pastes, I usually grind ginger, garlic and add just salt that lasts long nearly for a month, but I often fail in doing the same with green chili paste, do I have to add oil while grinding the green chilies, also please let me know if I want to add coriander and curry leaves also to the green chilies and grind how to store them for long.

      +Hrendar Kumar I use fresh only for chai but you can freeze whole ginger and use when needed, frozen ginger can be then grated better

    Thanks for the recipes. Froze salt-free pastes in ice cube trays, then popped the "tasty cubes" into freezer containers for easy access when cooking time comes. [Got the idea from Jeff Smith THE FRUGAL GOURMET way back in the '80's :-D . . . Okay, I'm old . . . GREAT TO BE ALIVE!!! I get to cook with Bhavna . . . YAAAAAYYYY ;-D !!!

    Bhavna ginger Garlic main namak dalne ka kya fayda hai aur kya mujhye freeze karna hai . vegetable main use karne ke time kese karna hai.

      salt is to preserve pastes well and just reduct or skip salt when you prepare recipes.

    Do u make yogurt for Khadijah at home?The reason I ask is I am using 2percent milk so I buy yogurt from outside . When I use some kind & make Khadijah it becomes spoil make water & yogurt separate. Can u tell me the reason please.

    We grow green chillis, long beans and pigeon peas directly on ground and they grow easily. Do not require much care even. Please watch my other gardening video for growing herbs as well.

    without adding salt how long can we store in a refrigerator (not in a freezer).? Because I did try to store in a freezer, but when I take it out to in my daily use container it gets little watery because of ice crystals.. Do you have any solution for this ice crystals.?

      Archana Gore I make in bulk. I take out about 1/2 cup each paste in my 4G box and keep that in refrigerator for daily use and the rest I freeze.
