Im a stay at home mom and my kids are older now. So I have the time to cook from scratch. But i dont have the energy anymore. Im a big semi homemade cook. Thanks for the ideas.

I much prefer using fresh ingredients, but sometimes, time or circumstances dictate a combination of fresh & connivence. I have several problems with my back which have gotten worse as I’ve gotten older, so my husband has taken over the cooking of our meals. In addition, our youngest child who is 41 and has Down Syndrome still lives with us. She is fairly independent but does need help with some things. So, if I’m having
a day where the pain in my back is extremely bad, then my husband inherits a lot on his plate. So I’m now a fan of the semi homemade. We use the frozen meatballs (the turkey variety to make it a little healthier) in a lot of recipes. We use them in a couple of different soups & a skillet dish. If we don’t have time to make what we planned on, we make quesadillas or eat leftovers. We try keep Tyson already cooked chicken in our freezer, so we use that for the protein on the quesadillas along with cheese & lots of veggies. We’ve use chopped sweet peppers, artichoke hearts (jarred in water), mushrooms, etc). They are SO delicious!!

I mix half cottage and half ricotta, add an egg and some garlic salt pepper and italian seasoning. Yum

I always use cottage cheese in my lasagne type recipes. I actually blend it with my immersion blender with an egg. We still get the flavor, but my picky kids don’t complain about the texture.
We always use cottage cheese.Ricotta seems mealy I haven't made the cupcake recipe in years. It comes from the back of the Duncan Hines cake mix box years ago. That was my families fancy company cake mix to make. I have turned stuffed bell peppers in a 20 min., skillet meal, pizza pats skillet same thing. Have an Old El Paso skillet enchilada recipe 20 min., from their cookbook. Good with ground beef and shredded chicken. Both have layers like lasagna excellent and both freeze well. You heat the corn tortillas in micro 1-2 min til soft then place cheese and roll up tight. set them into the sauce sprinkle cheese on top lid on simmer 5 min till cheese melts. One of the first things I taught my kids.
I was raised on cottage cheese mix in lasagna and I prefer it. Ricotta feels mealy to me.

Semi homemade is my favorite to cook. My favorite baked bean recipe came from Sandra, Sheboygan Baked Beans.
I think I’ve only been following for a few months but I freaking loooove this channel and the way you speak and break things down! Super easy and relatable and just calming. Even with the busyness that you say you have in the background with school, work, family, sports, activities and so forth, it’s still such a calming atmosphere! I’ve never had hamburger helper but now? I gotta try that recipe! 😅

I saw a video about a cottage cheese Chipotle pepper dip and I combined it with some shredded chicken cuz of the video where you mentioned doing that rotisserie chicken/dip mixture thing! So simple!

Just made Rhodes rolls today! But we make them into buttcrack rolls...no joke! Put 2 rolls into each muffin tin and let them rise until they are jumbo muffin size and bake...they end up looking like tiny butts lol (may seem odd, but a family tradition! It is priceless when we have someone new join us for dinner...the look on their faces when we mention the buttcrack rolls!) 😁

I didna take on the enchiladas,we call them chimichaladas. i took the delmonte frozen chicken and cheese burrito, taco sauce, and restaurant style queso, i thaw the burritos to room temo, fry them in veggie oil, fill baking sheet with the taco sauce place fried burritos on top, cover with heated queso, and shredded cheese if you have it and better than bouillon rice with diced pickled jalapenos. Bake at 350 for about 15 mins. 😋 Yummm! I always have rice and better than bouillon, and this is a after taco night second meal leftover recipes our family of 10 LOVES! 😊

This is my favorite cake recipe too, but I also add a package of chocolate chips! My friend, Faith, gave me the recipe when my youngest son was about 4. (He is 34 now ❤). He called it Mrs Faith’s cake and still does. So good and a sweet memory ❤
Cottage cheese in lasagna is the way to go! Love semi-homemade. After almost 50 years of marriage I am tired of coming up with new ideas and I am still working full time-great video. I must say, I am loving your hair!

I have been using my crockpot more too. Just saw a video about how crockpots and toaster ovens use way less electricity than an standard ovens. It's actually cents an hour to operate.

This is pretty much the only way I cook ... because I'm not a natural in the kitchen, and it can easily be frustrating to me. I love my rice cooker (I feel like I'm cheating but I can live with that haha) and slow/instant cookers. You have expanded my possibilities with your tips, so I thank you immensely! I started cooking bc of necessity (cost, time), but this is better than just canned pasta! 😉
I use cottage cheese. I run it in my food processor to smooth it, add parmigiana and then the texture is more like ricotta
Pistachio and yellow is really good.
My favorite convenience item is Naan bread. When it goes on clearance I stock up and put it in the freezer. I can make pizza, garlic bread, sandwiches.

When my family came down for our wedding this past Thursday, I made your lazy enchiladas with the taquitos and they were delicious. Far yummier than anything new could get at a restaurant here.
My mom used cottage cheese in her lasagna, so that's how I make it. I prefer it that way anyways.

I use both ricotta and cottage cheese. I grew up in ricotta but started to reduce the amount and sub the rest with cottage cheese a few years ago

subscribing because you mentioned crockpot lolol. My fiance has boxing twice a week and i have work and grad school. We got a Crockpot as a wedding gift so i'm like oh that would be perfect if i can find recipes lolol.
I loved the semi homemade show, so bummed when it stopped. I personally love cottage cheese in pasta dishes, but the hubs liked ricotta. So I do a half and half as a compromise. Sometimes it's, "I cook it my way. You cook it your way...... ". Love your videos!! Have a good week.
