Gosh I love your thought about cooking a big elaborate meal all day, having it consumed in short order, cleaning up all the dishes then the family having the “audacity “ to ask for food the next day. Well Said!!!!

If you're allergic to shrimp it's very, very important to not put it on the same sheet pan as the steak. Liquid from the shrimp WILL run over and contaminate the steak and cause a reaction. Even a "little bit of an allergy," as you said, is dangerous. Even if you don't feel much of a reaction, a reaction is still happening and it can even escalate into anaphylaxis with repeated exposure. Please also use separate utensils and serving dishes. I am allergic to several foods but my husband is not, and I have a lot of extra dishes to wash after every meal but it's worth it. Please be safe.

YES, this!! When I was raising my family I found this to be the most overwhelming part of the holidays. You have all the shopping and planning and decorating and cooking and wrapping etc. etc. while still doing regular laundry and errands and feeding the family. It can be so stressful. I miss having my kids at home but can't say I miss all that work! 🤣

I’ve never made your bakes potatoes and cottage cheese until a few weeks ago. I’m hooked! It’s delicious! I make a bunch of potatoes in the instant pot once a week and just reheat them for lunch. It’s such a quick and easy lunch with a busy 5 month old baby at home,
I love my instapot. I did try using the slow cooker feature on it and it didn’t quite work out like a real crockpot.
Mindy is always reading my mind. I am making an instant pot potato soup for dinner tonight and after that, I will need more throw and go ideas for for this busy week/season

Great video! That oven pasta dish looks good and it could be the base for so many variations. Add broccoli or peas at the end. Maybe even leave out the chicken and add corn and black beans and spices. I love how you use basic ingredients to make yummy things that can be adapted.
I appreciate the commentary here so much! Cooking and figuring out what to eat can be so hard some days
We do large bulk meat purchases about 3 or 4 times a year. They are planned ahead so we schedule a meat processing day, usually the day after. We break it down into chops, strips, dice, etc. Incidentally, we grind our own sausages, too. Anyway, we weigh and deal packages or the meat, LABEL!! and throw them in the freezer. Some are even premarinated. It is a busy day but with pre-planning it goes pretty smooth and saves LOTS of time and money.
Oh I'm definitely making the beef ramen. My kids would love this.

Stir in a package of Italian dressing mix in your casserole too. Soooo good
The other night I cooked a cup of pasta . Once it was drained I added seasoning, a half can of Corn, a quarter of a jar Alfredo Sauce, and pieces of a slice of deli Ham, Onion, and Broccoli cooked it in the microwave and it made two servings of a delicious Casserole.
Another night I took a can of mixed Vegetables, a can of Chicken, and a cup of Instant Potato and seasonings ( I forgot the cream of mushroom soup ) and baked it in the oven as a Cottage Pie. Tasted good. Today I took more of the leftover jar Alfredo Sauce covered the Cottage Pie and microwaved it for yum a new meal.
Could you consider doing a clean out your freezer/ pantry AND meal prep from that, video? I recently Took inventory of my freezers but always get stumped on what to make! Thanks!

I made the oven chicken pasta. I was skeptical of how the method with raw pasta would actually work, but I gotta say I couldn’t find fault with the finished texture! I did stir the pasta several times while baking so the top layer didn’t dry out. Also added tony chacheres and basil to the chicken. It was so easy and hands off, I will make it again!
I actually put shaved steak in my crockpot + follow the Mississippi mud recipe, I either make steak n cheese subs or a flatbread pizza with it!

That shaved beef from Aldi is a game changer when it comes to quick recipes - I use it for a quick udon stir fry, Philly cheese steak stuffed peppers, fried rice, etc. so good!

I am making two of these today: the chicken Alfredo casserole and the tortellini sheet pan. I have all the ingredients on hand except I need to get some Parmesan. EDIT: the chicken Alfredo casserole was delicious! I had all the ingredients on hand except heavy cream. I had half and half and didn’t want to buy another ingredient so used that. It was a success. I served it with steamed broccoli.

To really up the flavor of fajita veggies, toss them in a mix of oil, lime juice, and soy sauce before pan roasting them. It's not a lot, but it makes a big difference in the taste

What is a good night's sleep? It's been so long I can't remember. Plus its 1 pm and I've already done dishes 3 times. Seems never-ending without a dishwasher (except my 2 hands). I think the reason jarred garlic isn't as flavorful is because they use elephant garlic which tastes lIke garlic but is actually in the leek family

It’s not a major allergy, I just prefer not to consume it, that’s when I feel the effect.
