Farmer"s Breakfast Skillet
2 to 3 Idaho Russet Potatoes
1/2 pound breakfast pork sausage
6 slices bacon
half onion, chopped
half green bell pepper, chopped
6 to 8 eggs
1 cup shredded cheddar cheese
Instructions
Cook sausage in large skillet until browned then remove and place on plate. Cook bacon until crisp and remove and place on plate with sausage. Keep grease in skillet to cook onions, peppers, and potatoes. Season with salt and pepper and cook until potatoes are crispy and done in the center. Add eggs and cook until consistency you prefer. Turn off the heat and sprinkle over top.

"Potatoes take the longest to cook"....so start them first, and definitely don't put the onions in before potatoes they will burn black and bitter.
