Autumn is my favorite season, and my second favorite is winter. I hate hot and humid weather the whole summer and most of the spring is just pure pain for me (and my allergies are making it worse). The best budget meal for me is a hot melty sandwich. I usually grate some cheese I have, and moisten it with some mayo, and sour cream, I add tiny bits of onions, and tomatoes and even a small amount of olives (very small diced up peaces and just a little bit needed), black pepper, and some dried herb mixture. Seasoning salt on top of the open faced sandwiches and into the oven it goes. I call itt hot sandwich Deluxe :) Usually kids love it (maybe without olives if they are more on the picky side), and it is great to have a nice salad with it.
Learning to cook dry beans was a game changer for me. I also cook them up and freeze them. I don't know why I was afraid of them for so long. I miss roast. I haven't been buying if for a while for obvious reasons. It's a treat in my house. Everything looks delish!
I love fall too!!! Your roast looked so good!! It’s making me want to make one for supper!!!! Any weather is soup weather for me!!! I recently made a copycat soup for the Cream of Chicken soup from The Cheesecake Factory and it was soooooo good!!! You should try it!!! I bet your kids would love it!! There’s 2 different versions of it online and one of them calls for white wine. I’ve made both recipes and I didn’t see any difference so if you try it, you can skip the wine. Fresh thyme is better in it though! I used just dried thyme in the first one and fresh in the second and I did see a difference with that!!
