You're not gonna baste for long without overcooking so the thyme really isn't doing much.
Recipe is simple. Fish, oil, salt and butter. What’s tricky is the execution. That is difficult to show in 10 seconds.
I’ve learned that fish is an exceptional candidate for marinades, because the fish tends to absorb more flavor quicker and deeper into the tissue than turkey, beef, chicken, and so on. I tried an Asian inspired salmon marinade, and it was the most moist and tastiest piece of salmon I have made to date. Don’t go beyond 30 minutes with a marinade - and especially after an hour. The fish will deteriorate to a gross state. Combine this with Gordon’s cooking method and you’ll have an exceptional piece of salmon.

A dry brine gives you firmer, juicer fish with crispy skin which is why you need a lot of salt

Lord have mercy. You cannot just take other people shit, use it saying they taught you, and then say that we should follow you. I will continue to follow Gordon. If you want people to follow you, then you should set trends like Gordon. I am sorry, you are doing this just for people to comment, Sigh.. I fell for it.

It's not that good ,you don't need to open your mouth that wide .
This is how we shallow fry fish in Kerala, India from many generations 😀...But we add more spices and marinate the fish...May be Ramsey discovered this on his trips to India...

It's actually better to put the salmon on a cold pan first then after you add heat and skin is cooked you flip it and turn off the heat and let the salmon cook from the residual heat. But this way works
Adding a bunch of salt is not what I want.

For those that don't like the skin, nor like having the task of removing skin from the salmon after its been served:
375 degrees oven, don't oil pan sheet, season it (idk if it makes a difference, I just hope the flavor or aroma will seep thru the skin and into the bottom of the fish meat) with the same seasoning you're using for the salmon, place skin side down. Cook for roughly 20 min. Skin will stick to pan sheet/aluminum foil (easy clean up), use spatula and go in between skin and meat and serve on plate. Easy
The skin is easy enough to peel off on the plate after cooking if it doesn't come off in the pan.

Cold sear skin side down after a 15 min brine is way easier/better result. And you don’t need oil bc the fat renders itself. That’s Americas test kitchen’s method and it never fails me. You do need non stick for that method though.

That can depend on the size, how hot the pan is, and how cold it is when you put it in. But a good rule is, wait until the color on the side changes about 3/4 of the way up, and then flip. It doesn’t take long on the other side after that till it’s done
Should have basted with the butter Gordon always does that and it gives incredible texture

First that is 2 different salmon cooked. 2nd fold the salmon halfway then make ur cuts.
The truth is it is not the best way but it is a good way. Best is always temporary and good is hard to argue with. Have a good day.
If u want to understand why u do these things like putting butter in the pan or slices into the salmon or skin side down first there Is a chemical reaction which u learn in school

honey you did not cook that salmon all the way through, you can see the pink on the sides.
I cook my skin face up first. That way I can sear up the skin side well and still able to baste my fish without burning my skin.
