  • Passionfruit Tart with a chocolate cookie crust! The chocolate cookie crust cuts right through the super tangy and sweet passionfruit filling! And the crumbly texture of the crust is the perfect contrast for the creamy and smooth filling! This whole thing is just absurdly delicious!
    Passionfruit curd
    6 tbsp unsalted butter (84 grams)
    6 tbsp granulated sugar (75 grams)
    Pinch of salt
    4 large egg yolks
    1/2 cup passion fruit pulp
    Chocolate Tart Dough
    1 1/2 cup all-purpose flour (191 grams)
    1/3 cup unsweetened cocoa powder (39 grams)
    1/4 tsp fine sea salt
    3/4 cup unsalted butter softened (170 grams)
    1/2 cup powdered sugar (62.5 grams)
    1 large egg yolk
    1 teaspoon vanilla extract
    Passionfruit tart filling
    1 cup white chocolate chopped (170 grams)
    1/2 cup heavy cream (120 grams)
    8 oz. cream cheese room temperature (226 grams)
    1/2 cup powdered sugar (62.5 grams)

      Do you have any chantilly cream of any sorts? We need a cream that will whip into a creamy and fluffy consistency.
